Homemade Ice Cream Sandwiches

Ice Cream Sandwiches are a classic frozen treat. Sure, you could just go buy some from the store, but with a little extra effort, you can make excellent homemade ice cream sandwiches that taste fantastic and are customizable.

You can fill them with whatever flavor of store-bought ice cream you want. Vanilla is always a great choice, but feel free to use your favorite ice cream flavor. How about using strawberry, cookies and cream, or mint chocolate chip?

It only takes 4 ingredients to make, and you end up with 2 layers of thick, chewy, chocolaty goodness surrounding the ice cream layer. You could even fill it with your own homemade ice cream if you want to take it up a notch higher. When making mine, I stuck with classic vanilla ice cream, and the family LOVED them.

  • FAMILY SIZED BOX BROWNIE MIX
  • LARGE EGGS
  • WATER
  • ICE CREAM

Preheat your oven to 350°F (175°C). Line two 9×13-inch baking dishes with aluminum foil or parchment paper.

Combine the melted butter, brownie mix, eggs, and water in a large bowl. Mix until all ingredients are wet; some lumps will remain. Divide the brownie batter evenly between the two prepared pans and spread in an even layer to cover the bottom of each pan.

Bake at 350°F (175°C) until a toothpick inserted into the center comes out clean, about 20-25 minutes. Allow the brownies to cool completely in the pans.

Open the carton of ice cream. If using rectangular ice cream, slice it into 6 slices. Place the ice cream slices evenly over the cooled brownie in one of the pans. Allow the ice cream to soften slightly, then spread it evenly over the brownie using an offset spatula if available.

Remove the second brownie from its pan by lifting it out with the foil or parchment paper. Place it upside down on top of the ice cream layer, gently pressing down to secure the layers together. Cover the pan and freeze for at least 4 hours or until the ice cream is firm.

Remove the pan from the freezer and lift the ice cream sandwich block from the pan using the foil or parchment paper. Place on a cutting board and cut into 15 individual ice cream sandwiches. Wrap each sandwich in plastic wrap and place them in a gallon-sized freezer bag. Store in the freezer for up to 1 month.

Ingredients
  

  • ½ cup butter melted
  • 16.3 oz box family size brownie mix I used Betty Crocker Fudge brownie mix
  • 2 eggs
  • 2 Tbsp water
  • ½ gallon carton of ice cream (the rectangular carton type works best)

Instructions
 

  • Preheat oven to 350 degrees
  • Line 2 (9 x13 inch) baking dishes with foil or parchment paper.
  • In a bowl, combine the butter, brownie mix, eggs, and water until combined. You want it all to be wet but some lumps will remain.
  • Divide batter evenly between to 2 prepared pans and spread out even cover the bottom of both pans.
  • Bake at 350 degrees for 12-14 minutes until a toothpick inserted comes out clean. Allow to cool completely.
  • Open carton of ice cream. If using the rectangular type. slice ice cream into 6 slices and place ice cream slices over 1 pan of the baked brownie.
  • Allow the ice cream to soften slightly and spread evenly over brownie. An offset spatula comes in handy here if you have one!
  • Remove other brownie from pan and set upside on top of ice cream. Gently press down to secure with ice cream. Cover and freeze for at least 4 hours.
  • Remove from freezer and cut into 15 ice cream sandwiches.
  • Wrap each sandwich with plastic wrap and place in a gallon sized freezer bag. Will store for up to 1 month in the freezer. Makes 15 sandwiches
