Instant Pot Cubed Steaks with Gravy

I truly feel like my Instant Pot is like a magic wand in my kitchen! It makes meals that I don’t think I can make on a busy week night possible. That’s exactly what this recipe for Instant Pot Cubed Steak with Gravy recipe is – magic for a weeknight meal!

I love a good cubed steak. This Instant Pot version is an awesome way to cook them up. It’s so easy to make and only requires 4 ingredients!

Instant Pot Cubed Steak and Gravy

Cubed steak is a cut of beef, usually top round or top sirloin. It’s tenderized and flattened by pounding with a meat tenderizer, or by using an electric tenderizer. The name refers to the shape of the indentations left by the tenderization process. This thin cut is a great value for everyday meals. This cut of meat is most commonly used for chicken fried or country fried steak.

The results of cooking this cut of beef with the Instant Pot is fork tender meat. I highly recommend serving these steaks with with a side of mashed potatoes. It’s the perfect way to enjoy that flavored gravy that comes from these steaks!


I’m glad I have two Instant Pots, because while the steak cooks in one I use the other one to cook my mashed potatoes. However, instant potatoes are also an even easier option.

Begin by placing your cube steaks into your Instant Pot. I like to season them with a little salt and pepper before I put them in. Then, sprinkle in a packet of dry Au Jus gravy mix. Next, pour in a 10 oz. can of condensed French onion soup.

Fill the can that had the soup in it with water and add that to the Instant Pot too. Last, you add in a tablespoon of steak sauce, but that’s completely optional. I like to add it if I have it.

Place the lid on the Instant Pot and seal. Set it to cook on high pressure for 3 minutes. Then, when it finishes cooking, allow it to sit for a 5 minute natural pressure release. Now, do a manual release to remove any remaining pressure.

Remove the steaks from the Instant Pot. Cover them to keep warm and set them aside.

Turn the Instant Pot on to sauté. Then, in a small bowl, mix 2 tablespoons of cornstarch with 4 tablespoon water.

Whisk this corn starch mixture into the liquid from the meat, in the Instant Pot. Cook for about 3 minutes or so until the gravy is the desired thickness. The longer it cooks, the thicker it will get.

Serve the meat up with some mashed potatoes and the gravy, along with your favorite steamed vegetable. Voila! Dinner is served!

Can I use other cuts of beef instead of cubed steak?
For best results, you should use cubed steak for this recipe. If it’s unavailable, use round steak or chuck roast cut into cubes. They will work well too. Just keep in mind that tougher cuts may require a longer cooking time to become tender.

How do I prevent the meat from becoming tough in the Instant Pot?
To prevent the meat from becoming tough, it’s important to not overcook it.

Follow the cooking time in the recipe. Let the pressure release naturally for the 5 minutes before releasing any remaining pressure manually. This helps the meat retain its moisture and tenderness.

Can I make this recipe ahead of time?
Yes, you can prepare the cubed steak and gravy ahead of time and store it in the refrigerator for up to 3 days. Simply reheat it gently on the stovetop or in the microwave before serving. You may need to add a little extra beef broth or water to thin out the gravy if it thickens too much during storage.

  • 4 cubed steaks
  • 1 pkg Au Jus mix
  • 1 10 oz can french onion soup
  • 1 10 oz can water
  • 1 Tbsp steak sauce optional
  • 2 Tbsp cornstarch plus 4 Tbsp water


  • Place the steaks in your Instant Pot and sprinkle with the au jus gravy mix.
  • Add in the can of onion soup. Fill the same can with water and add that to the Instant Pot. Add in the steak sauce (optional).
  • Cook on high pressure for 3 minutes.
  • Allow for a 5 minute natural release. Then, perform a manual release to release the remaining pressure.
  • Remove the steaks and cover to keep warm. Set aside.
  • Turn your Instant Pot onto sauté mode.
  • In a small bowl, whisk together the cornstarch with the 4 Tbsp water.
  • Whisk the cornstarch mixture into the liquid from the steaks in the Instant Pot.
  • Bring the mixture to a boil and continue cooking for 3-5 minutes until it reaches desired thickness. It will thicken as it boils.
  • Serve steaks with gravy. Serves 4.
