Summer is sandwich season! I love to whip together a good sandwich for dinner in the summer. It is so quick and easy to do, especially after a long hot day of fun in the sun! Or sandwiches are the perfect take along meal as you head out to your favorite summer spot. Today, I have an awesome sandwich spread that is insanely easy. This roasted red pepper sandwich spread is a nice addition to give any sandwich a little pizzaz. Since the spread incorporates cream cheese, you can even leave cheese off your sandwich.
All you need is a jar of roasted red peppers. You can find these on the pickle isle of your store. Those get mixed in the cream cheese along with some mayonnaise, fresh basil, salt, and pepper. It will keep for a few days in the refrigerator. It will be a delicious addition to any sandwich. I think it would even be wonderful on a burger! However, be sure to check back tomorrow because I have a way to use this roasted red pepper sandwich spread in a tasty sub sandwich!

- LIGHT CREAM CHEESE
- ROASTED RED PEPPERS
- MAYONNAISE
- FRESH BASIL
- SALT
- PEPPER
Roasted Red Pepper Sandwich Spread
Ingredients
- 1 (8 oz) pkg light cream cheese, softened
- 1/2 cup finely chopped roasted red peppers
- 1/4 cup mayonnaise
- 2 Tbsp. fresh minced basil
- 1/4 tsp salt
- pepper to taste
Instructions
- Combine all of the above ingredients in a bowl until well combined. Store in the fridge up to 3 days.
