Summer is sandwich season! I love to whip together a good sandwich for dinner in the summer. It is so quick and easy to do, especially after a long hot day of fun in the sun! Or sandwiches are the perfect take along meal as you head out to your favorite summer spot.
Today, I have an awesome sandwich spread that is insanely easy. This roasted red pepper sandwich spread is a nice addition to give any sandwich a little pizzaz. Since the spread incorporates cream cheese, you can even leave cheese off your sandwich.

Roasted Red Pepper Sandwich Spread
Ingredients
- 1 (8 oz) pkg light cream cheese, softened
- 1/2 cup finely chopped roasted red peppers
- 1/4 cup mayonnaise
- 2 Tbsp. fresh minced basil
- 1/4 tsp salt
- pepper to taste
Instructions
- Combine all of the above ingredients in a bowl until well combined. Store in the fridge up to 3 days.
