One simple ingredient can make a sandwich go from regular to wow! This roasted red pepper aioli is one of those ingredients that can do just that.
Now the main difference between mayonnaise and aioli is that an aioli is like a mayonnaise with garlic as a seasoning. It doesn’t have to just be garlic, but garlic is a must include it in order for it to be considered an aioli. A true aioli is also made with olive oil not mayonnaise. Making an aioli with mayonnaise is a great shortcut. Besides red pepper aioli other popular flavors are sriracha, chipotle, and lemon.
For this roasted pepper version you can roast some sweet red peppers yourself or just buy the ones that are already roasted at the store. You can find them in a jar on the pickle isle.
I like to use this particular aioli on panini sandwiches. However, it is also pretty awesome on a burger too. You can take things even further by dipping your fries or chips in it also. That roasted red pepper in there really adds a nice punch of flavor to what ever you use it with.

- MAYONNAISE
- GARLIC
- FRESH LEMON JUICE
- ROASTED RED PEPPERS
- FRESH FLAT-LEAF PARSLEY
- SEA SALT
- BLACK PEPPER
Roasted Red Pepper Aioli
Ingredients
- 3/4 cup mayonnaise
- 3 cloves garlic, minced
- 1 Tbsp fresh lemon juice
- 1/4 cup chopped roasted red peppers
- 1 sprig fresh flat-leaf parsley
- 1/8 teaspoon sea salt, more to taste
- pinch of black pepper, more to taste
Instructions
- In food processor or high-powered blender, add all of the ingredients and pulse until well blended and smooth.
- Refrigerate for at least 30 minutes before serving.
