While the original recipe suggests serving it as a main dish for three people, I’ve found that it makes a fantastic side dish for up to five.

  • SMOKED SAUSAGE (KIELBASA ALSO WORKS)
  • PROCESSED AMERICAN CHEESE

Cook the Potatoes: Heat a large skillet over medium heat. Add a bit of oil and cook the O’Brien potatoes until they are golden brown and crispy.

Add the Sausage: Stir in the cooked sausage to the skillet with the potatoes. Cook for a few minutes to heat the sausage through.

Melt the Cheese: Remove the skillet from the heat and generously top the potato and sausage mixture with shredded cheese. Cover the skillet with a lid and let it stand for about 5 minutes or until the cheese is melted and bubbly.

Ingredients
  

  • 4 ½ cups frozen cubed O'Brien hash brown potatoes
  • â…“ cup canola oil
  • ¼ lb smoked sausage cut into 1/4 inch slices, then cut slices in half (Kielbasa also works)
  • 5 slices American cheese

  • In large skillet, cook O’brien potatoes in oil over medium heat until golden brown.
  • Stir in sausage, heat through.
  • Remove from heat and top with cheese.
  • Cover and let stand for about 5 minutes until cheese is melted. Serves 3 or makes a side dish for 5.
