Recently, I have been trying to use up any leftovers we may have. I don’t like things going to waste. So, I had some leftover rice in my refrigerator and some leftover ham in the freezer. I figured that I could make ham fried rice.
Next, I searched for a simple recipe. I didn’t want anything too complicated. I found a recipe similar to what I was looking for at allrecipes.com.
The recipe there was actually only for two servings. The great thing about Allrecipes is you can put in the number of servings that you want, and it will automatically adjust the recipe for you. I adjusted the recipe below for four servings, but it worked fine for my family of five.
I modified the recipe by removing the chili powder. Also, I added oil to the rice while heating it in the skillet.
We use Calrose rice, which is quite sticky. So, I felt my rice needed it to help break it up. The recipe turned out great, and I used up my leftovers in a new way!

How to Make Easy Ham Fried Rice Recipe
Start by cooking beaten eggs in a large skillet or wok with a bit of oil. Scramble until they’re fully set, then set them aside.
Using the same skillet, fry the rice, chopped ham, garlic powder, ginger, and pepper. If you like, add peas for a touch of color and texture. I have also used the pea and carrot mix. Feel free to use the veggies you like.
Once heated through, stir in soy sauce and scrambled eggs, mixing well to distribute the flavors evenly. Serve this dish immediately—it’s perfect as a main dish or a fulfilling side dish.

Can I use any ham for ham fried rice?
Yes, but thicker slices work better. You can use cooked ham, leftover holiday ham, or even ham steak.
Do I need to use day-old rice for ham fried rice?
Day-old rice from the fridge is preferred as it tends to be less sticky. But you can spread fresh cooked rice on a tray to cool and dry slightly.
Can I use other proteins besides ham in the fried rice?

- 4 eggs lightly beaten
- 1 Tbsp canola oil or vegetable oil
- 1 ½ cups cold cooked rice
- 1 ⅓ cups diced fully cooked ham
- 1 ½ tsp garlic powder
- ½ tsp ground ginger
- ½ cup frozen peas thawed (optional)
- Dash pepper
- 1 Tbsp soy sauce
Instructions
- In a large skillet, cook and stir eggs in oil over medium heat until eggs are completely set. Remove and set aside.
- In same skillet, cook the rice, ham, garlic powder, ginger, pepper and peas if desired until heated through. Stir in soy sauce and reserved eggs. Serve immediately. Serves 4.
