If you want to elevate your sandwich game, this Grinder Salad Sandwich is a must-try. In addition to savory meats and provolone cheese, the sandwich is topped with a salad mixture. The salad includes a simple homemade dressing along with sandwich toppings – lettuce, pepperoncini peppers, red onion, and parmesan cheese.

Now, you can use your favorite bread for the base of these sandwiches. However, I used bread from my local Jimmy John’s sandwich shop. You can go there and buy loaves of day-old bread for just 50 cents a loaf! You can get 2-3 sandwiches from each loaf. I like to cut the loaf into thirds. I think it’s the perfect size for these sandwiches and the family loves them.

- RED WINE VINEGAR

- ITALIAN SEASONING

- SHREDDED ICEBERG LETTUCE
- RED ONION
- SANDWICH ROLLS
- SALAMI

- HAM OR TURKEY
- SLICED PROVOLONE CHEESE
- TOMATO SLICES

Instructions for Grinder Salad Sandwiches
Prepare the Salad Mixture: In a large bowl, combine mayonnaise, red wine vinegar, salt, oregano, Italian seasoning, and garlic powder. Stir until well mixed.
Add Veggies and Cheese: To the bowl, add pepperoncini pepper rings, grated Parmesan cheese, sliced red onion, and shredded lettuce. Mix everything together thoroughly and let the mixture sit while you prepare the sandwiches.
Preheat the Oven: Set your oven to 400°F (200°C) to preheat.

Assemble the Sandwiches: Lay out your bread slices on a baking sheet. Place some of the pepperoni slices on one side of the bread. On the other side, add slices of salami and some of the ham of turkey. Follow with 2 of the half slices of provolone cheese on each side.

Bake the Sandwiches: Bake the assembled sandwiches in the preheated oven for a few minutes, just until the cheese is melted and bubbly.

Add Final Toppings: Remove the sandwiches from the oven and top them with slices of tomato. You can season the tomato with salt and pepper. Finally, spoon some of the prepared salad mixture over the top of each sandwich.

- 8 oz iceberg lettuce shredded
- ½ of a red onion thinly sliced

- 6 sandwich rolls sliced in half
- 12 oz ham or turkey thinly sliced
- 12 slices salami sandwich size
- 12 slices pepperoni sandwich size
- 12 slices provolone slices cut in half
- 1 large tomato thinly sliced
Instructions
- In a large bowl, combine mayonnaise, red wine vinegar, salt, oregano, Italian seasoning, and garlic powder. Stir until well mixed.
- To the bowl, add pepperoncini rings, grated Parmesan cheese, sliced red onion, and shredded lettuce. Mix everything together thoroughly and let it sit while you prepare the sandwiches.
- Preheat your oven to broil.
- Lay out bread, cut side up, on a baking sheet. Place pepperoni slices on one side of the bread. On the other side, add slices of salami and some ham or turkey. Follow with two half-slices of provolone cheese on each side.
- Broil the sandwiches in the preheated oven for a few minutes, just until the cheese is melted and bubbly.
- Remove the sandwiches from the oven and top with slices of tomato, seasoned with salt and pepper if desired. Spoon some of the prepared salad mixture over each sandwich. Enjoy! Serves 6.
