Easy Pizza Grilled Cheese Sandwiches

After Super Bowl Sunday, I found myself with some leftover salami that needed a purpose. One night for dinner, I decided to create these easy pizza grilled cheese sandwiches, and I must say, I loved them so much that I enjoyed them for the next two days for lunch as well! They have quickly become a new favorite.

There’s nothing too complicated about these sandwiches, but I highly recommend getting Genoa salami or sandwich pepperoni from the deli. I prefer it sliced thin, and you’ll use about four thin slices per sandwich. The thin slices create a perfect texture for this sandwich.

Next, you’ll want good quality bread. While any sandwich bread you have on hand will work, the better the bread, the better the sandwich. I picked up a thick-sliced French bread from Costco, and it was an excellent choice. This sandwich uses a blend of two kinds of cheese, which makes it absolutely delicious!

The bread for these sandwiches isn’t just coated with butter; it goes beyond that. You add a sprinkling of Italian seasoning and a little coarse salt. I used pink Himalayan salt, which enhances the savory flavors even more.

Finally, you need pizza sauce. I used a jarred sauce from the store, just be sure to pick one that is thick to prevent it from running out of the sandwich. I used the Classico brand. Trust me, your taste buds will be so happy with this sandwich. It’s a fun and tasty change from regular pizza! Cook the Sandwiches: Toast the sandwiches on the stove top in a large skillet or pan over medium to medium-low heat until golden brown on both sides and the cheese melts and is gooey.

Ingredients
  

  • 8 thick slices large rustic bread
  • 4 Tbsp butter
  • 2 tsp Italian seasonings
  • ½ tsp coarse salt
  • 8 slices mozzarella cheese
  • 16 thin slices Genoa salami or sandwich pepperoni

Instructions

  • Flip over 4 slices of bread (buttered side down). Top each with mozzarella cheese, salami, pizza sauce, and Provolone cheese. Place the remaining slices of bread on top, buttered side up.
  • Toast the sandwiches in a large skillet over medium until golden brown on both sides and the cheese is melted, remove them from the skillet. Slice each sandwich in half and serve hot. Serves 4.
