Cucumber Salad

This is a great salad for summer! This cucumber salad is great for barbecues and picnics because it isn’t a mayo based salad. Consequently, it is different from the normal barbecue food.

Additionally, it is a great salad to make if you have a summer vegetable garden. You can use up those freshly grown tomatoes and cucumbers.

This recipe comes from my mom. I made this cucumber salad to take to my summer work party. It makes a lot but you can easily half the recipe too. You gotta give this one a try.

  • CUCUMBERS
  • TOMATOES
  • WHITE OR RED ONION
  • VINEGAR
  • OIL
  • FRESH LEMON JUICE
  • SALT
  • BLACK PEPPER
  • SUGAR
  • PARSLEY

You need some cucumbers, tomatoes, and onion. Once you peel and cut them up with a sharp knife, you layer them in a 9 x 13 inch dish. Using a mandoline will give you consistent slices.

Then in a bowl, you mix the dressing ingredients. This includes vinegar, oil, lemon juice, salt, pepper, sugar, and parsley.

Pour that over those veggies, then cover and place in the fridge for 6-8 hours. Also, give it a stir about halfway through the refrigeration process. So delicious! Just not summer at my house without having this salad as a side dish at some point.

Can I make this salad ahead of time?
Yes, you can prepare this salad 6-8 hours ahead of serving. It needs to sit in the refrigerator for these hours to allow the flavors to meld.

What type of cucumbers should I use?
Any variety works well, but seedless cucumbers or English cucumbers are ideal as they have fewer seeds and a milder taste.

Is there a substitute for sugar in the dressing?
You can use honey or a sugar substitute if you prefer. Adjust the amount to suit your taste.

Ingredients
  

  • 5 large cucumbers
  • 2 tomatoes
  • ½ cup onion minced
  • ¾ cup vinegar
  • cup oil
  • 1 Tbsp lemon juice
  • 1 tsp salt or more
  • 1 tsp pepper
  • 1 Tbsp sugar
  • 1 Tbsp chopped parsley

Instructions
 

  • In a 9 x 13 baking dish put half the cucumbers followed by half the tomatoes and onion. Repeat. Mix together the remaining ingredients and power over layers.
  • Let soak 6-8 hours in refrigerator stirring half way through.
