Perfect for lazy weekend brunch or special occasions like Mother’s Day and family gatherings, this Tater Tot Sausage Breakfast Casserole is a one-dish wonder that satisfies even the heartiest appetites.
This dish not only simplifies mealtime but also delivers a hearty and satisfying meal. It includes tasty sausage, crunchy tater tots, melted cheese, and fluffy eggs. I loved the delicious combination of flavors and textures in this dish.

While this recipe traditionally calls for tater tots, you can easily customize it to suit your preferences. I prefer swapping out the tater tots for tater rounds. These bite-sized, flat, and round potato pieces offer a different texture that my family and I like better than the standard cylindar shaped tater tots.
The rounds distribute more evenly throughout the casserole, ensuring each bite is packed with deliciousness and texture. Your family will love it!

How to Make Sausage Tater Tot Breakfast Casserole
Start by cooking the sausage in a skillet until no longer pink. Drain off any excess fat.
Preheat your oven to 350 degrees. Then lightly spray a 9×13-inch baking dish with cooking spray.
In a large bowl, toss the tater tots, cooked sausage, and cheeses together. Next, pour the mixture into the prepared 9×13-inch baking dish.
In the same bowl you mixed the tater tot mixture in, whisk the eggs, salt, pepper, garlic powder, onion powder, and milk together. Pour the egg mixture over tater tot mixture.
At this point you can bake it, place the casserole in the fridge and bake later, or freeze it for a future time. I’ve included baking instructions in the notes on the recipe card below if you choose to freeze it and bake later. The baking time is decreased because the tater tots will be thawed when you go to bake this at a later time.
To enjoy the casserole right away, bake at 350 degrees for 60-70 minutes until eggs are set. This recipe is also easy to half if needed. Just prepare and divide the mixture between two 8 x 8-inch baking pans. Enjoy one that day and freeze the other for later.
