Tater Tot Tacos

by Laura

There are all kinds of twists on a good old taco.  There is navajo tacos, flat bread tacos, taco pizza, and taco soup.  Well, today I have another twist for you – tater tot tacos – the ingredients of a taco serve over tater tots instead of in a tortilla.  The family loved it of course.  This dish reminded me of eating a taco with “mexi fries” at Taco Time.

I pride myself on coming up with ways to use tator tots, and I can’t believe I never thought to just pile on the taco ingredients! So clever. Thanks for the recipe!

thank you SO much! I can’t have corn because I’m nursing my toddler and hes allergic. Normally making taco’s means me making gluten free/corn free flour tortillas but now I can enjoy them easily! I like organic hash brown rounds. Kroger has them.

Holy cow…. this will be on the menu for next week’s taco night. I know it will be a hit- and who doesn’t love being called the “best mom ever” at dinertime! Thanks Laura!
