This easy chicken cobbler uses cooked chicken, so it’s a perfect use from that rotisserie chicken from the store. I like to cook up a bunch of chicken in my slow cooker. Then freeze it in bags for recipes just like this. You can have your chicken diced or shredded.

Frozen veggies is all you need for the vegetables in this dish. You can get a bag of mixed vegetables. My family doesn’t like the green beans in the bag of mixed frozen vegetables. So I buy a bag of frozen peas and carrots along with a bag of frozen corn. Then I use a half bag of each when I make this.

For the biscuit topping you can use a box of Red Lobster biscuit mix and use some Bisquick. Personally, I love the Red Lobster biscuit mix because you also use the seasoning packet that comes with it. This just gives even more added flavor to this dish.
Finally, you make the creamy sauce from a can of cream of chicken soup and some chicken broth. This dish is like a chicken pot pie with a biscuit crust. I promise this meal will become a go-to family favorite. Comfort food at its finest, offering a taste of home in every bite.

Ingredients
- ½ cup butter melted
- 4 cups cooked chicken diced or shredded
- ½ tsp poultry seasoning
- ½ tsp onion powder
- 10-12 oz bag or 3 cups frozen mixed vegetables carrots, beans, corn, peas, OR your favorites
- 2 cups Red Lobster biscuit mix with seasoning packet or Bisquick biscuit mix **See Note
- 2 cups milk
- 2 cups chicken broth
- 1 (10.5 oz) can cream of chicken soup
- 2 tsp fresh parsley optional for garnish
Instructions
- Preheat oven to 350 degrees.
- In a 9×13 or similar casserole dish, add butter and place into the preheating oven to melt, about 2-3 minutes until butter is melted. Remove from the oven. Add chicken in an even layer and sprinkle with poultry seasoning followed by onion powder and then the vegetables.
- In a bowl, combine biscuit mix and milk (and seasoning packet if using Red Lobster biscuit mix). If fine if there are lumps. Pour over the top of the vegetables. Do not mix.
- In another bowl, whisk together chicken broth and soup until smooth. Gently pour over the top of the biscuit mix. Do not mix. Sprinkle with the parsley if desired.
- Bake uncovered at 350 degrees for 45-50 minutes or until top is golden brown. It’ll be slightly jiggly in the center. Baking to 50 minutes will mean it will be a little less saucy. Allow to sit for 10-15 minutes before serving. Serves 6-8.
