When my corned beef didn’t get done in time for dinner tonight, I made this as a quick Plan B. My picky 7 year old doesn’t do tomatoes, so he wouldn’t consider it, but hubby said it was “very pretty” and “definitely a make again.” I had ravioli instead of tortellini, so that’s what I used. I also fiddled with the milk/cream amounts a bit, using less cream and more milk. It was very very good. Since I was making this for 2, I cut the recipe in half. I have just enough for lunch tomorrow left over.

I’m always looking for a good, creamy soup because I hate ones with broth! Can’t wait to make this now that soup season is upon us!
