Coconut Syrup

The other night I wasn’t in a cooking mood so I decided to make waffles for dinner. I also had a fresh pineapple sitting on my counter that a friend gave me as a Christmas gift. Then I remembered a coconut syrup recipe that I had originally seen on The Sister’s Cafe, but then had just seen Your Home Based Mom post on her site. See my thought process. Anyway, I decided at that point to make a tropical waffles for dinner.
I quickly made the coconut syrup, which was a breeze to put together. Then I chopped up the fresh pineapple and chopped up some macadamia nuts I had in the pantry. The creation was delish. I will however recommend you use a crisp waffle recipe for the coconut syrup. I made a soft waffle that evening and the syrup is on the runnier side. So it just ended up getting absorbed by my soft waffle making me want to put more on. Even with that though, it was still excellent.
I always think it is so wonderful that you can have a drab and boring winter day, yet you can brighten your day with the taste of something tropical. It brought me a little sunshine that day even though we had a nasty looking inversion day here. The only thing I wish I had that would have made it better was some fresh banana and maybe a light sprinkling of toasted coconut, but alas I had no bananas and didn’t want to bother with toasting the coconut.
Coconut Syrup

Ingredients
- 7-8 Tbsp butter I went for 8 Tbsp
- ¾ C buttermilk
- 1 C sugar
- ½ tsp baking soda
- 1 tsp coconut extract
Instructions
- Place butter, buttermilk and sugar in a pot.
- With stove on medium stir until butter melts and sugar dissolves. Bring to a boil and boil one minute.
- Remove from heat and add baking soda and flavoring. It will bubble up; just continue to stir and give it a 10 minutes or so for the ‘fizz’ to reduce before serving.
