One food that always makes me think of Christmas is banana bread. My mom always makes banana bread at Christmas time. So to continue that tradition, I’m sharing a recipe for buttery banana muffins. They great thing about muffins is the cook quicker than bread and they are already portioned out.

These buttery banana muffins are extremely fluffy and have a buttery taste to them. The recipe incorporates melted butter. You will definitely love this version. That rich buttery flavor is the perfect compliment to the sweetness of the mashed bananas.

Start this banana muffin recipe by whisking some flour, baking powder, baking soda, and salt together in a bowl. In another bowl, you whisk the banana, sugar, egg, and vanilla together. Then drizzle in the melted butter while whisking.

Now it’s time to stir that dry mixture into the wet ingredients. Fold together just until combined. Don’t over mix or you will end up with tough muffins. Scoop the banana muffin batter into muffin tins and bake. They are ready in about 15 minutes. Your kitchen will fill the the wonderful aroma of these delicious buttery muffins!

You can use either salted or unsalted butter based on your preference. If using salted butter, you may want to adjust the added salt in the recipe. I make this recipe as is with salted butter cuz I’m a salty girl.

Ingredients
  

  • 1 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 ripe bananas mashed about 1 1/2 cups
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • â…“ cup butter melted

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 12 count muffin with paper liners. Or grease each muffin cup.
  • In a bowl, add flour, baking powder, baking soda, and salt in a bowl. Whisk together and set aside.
  • In another bowl, whisk the bananas, sugar, egg, vanilla together. Then drizzle in the melted butter while whisking.
  • Add the flour mixture to the wet mixture and fold together. Mix until dry ingredients are just combined. Do not over mix.
  • Bake at 350 degrees oven for 15-20 minutes. Muffins will spring back when lightly tapped and a toothpick insterted in the center comes out clean. Makes 12 muffins.
