How to Make Beefy Rice-A-Roni Casserole
Start by preparing the box of beef flavored rice-vermicelli mix according to package directions. While that is cooking, you will brown some ground beef in a skillet. This is where you can add some diced onion in with the beef if you want, or leave it out if desired.
I usually leave it out. Mainly because my family is not a big fan of onions. Drain off any excess grease when you’re done browning.
Mix the cooked rice in the skillet with the beef. Add in a can of Campbell’s vegetable beef soup and water and stir until combined. Add the rice mixture into an 11 x 7 inch baking dish.
Sprinkle a cup of grated cheddar cheese over the dish. Bake at 350 degrees for 30 minutes. Make sure the cheese is melted and everything is heated through.

- While the rice cooks, brown the ground beef along with the onion (if using) in a large skillet. Drain off any excess grease.
- Preheat oven to 350 degrees.
- Add the prepared rice to the skillet along with the beef and mix in the can of beef vegetable soup and a can full of water.
- Stir together until combined and add to an 11x 7 inch baking dish.
- Sprinkle the shredded cheese over the top.
- Bake at 350 degrees for 30 minutes until the cheese melts and the dish is heated through. Serves 4-6.
