Easy Chicken and Rice Salad

It is the season for potlucks and picnics. So, I  thought it would be fun to do a salad week this week, just in time for the 4th of July. Today’s easy chicken and rice salad is great for a potluck or perfect for a simple summer dinner.

It is similar to another salad recipe I have share before but is even easier. However, with this version you only need 4 ingredients. This make this version so easy to make.

First you need to cook up a package of chicken flavored rice-a-roni. You will need the ingredients on the package, but just cook it up according to package directions. Then the rice will need to cool. So be sure to allow enough time for the rice to cool.

Next you will need some chicken. You can use regular chicken but I kept it even easier with canned chicken. You then mix the cooled rice and chicken with some mayonnaise and lemon pepper. After that, I give it at least 1 hour to chill in the fridge. To serve it up fancy, I place a scoop of salad on a lettuce leaf and sprinkle a few almond slices on top. Add a roll on the side of these easy chicken and rice salad and you have a delicious meal.

  • CHICKEN FLAVOR RICE A RONI, PLUS INGREDIENTS REQUIRED ON PACKAGE
  • CANNED CHICKEN
  • MAYONNAISE

Ingredients
  

  • 1 6.9 oz pkg. chicken flavor Rice a Roni, cooked according to package directions and cooled
  • 1 12.5 oz can chicken, drained
  • ¾ cup mayonnaise
  • ½ tsp lemon pepper

Instructions
 

  • Combine all of the above ingredients together and serve. I do prefer to give it at least an hour in the fridge to chill before serving. Serves 4-6
