It is the season for potlucks and picnics. So, I thought it would be fun to do a salad week this week, just in time for the 4th of July. Today’s easy chicken and rice salad is great for a potluck or perfect for a simple summer dinner.
It is similar to another salad recipe I have share before but is even easier. You only need 4 ingredients and is so easy to make. Just be sure to allow time for the rice to cool. You can use regular chicken but I kept it even easier with canned chicken.
- 1 (6.9 oz) pkg. chicken flavor Rice a Roni, cooked according to package directions and cooled
- 1 (12.5 oz) can chicken, drained
- 3/4 cup mayonnaise
- 1/2 tsp lemon pepper
- Combine all of the above ingredients together and serve. I do prefer to give it at least an hour in the fridge to chill before serving. Serves 4-6
