Barbecue Chicken Quesadillas

by Laura

They have bbq chicken pizza, so why not a bbq chicken quesadilla! A while back, I had some family over for dinner and I made slow cooker barbecue chicken. I ended up having some left overs. I never mind having leftovers, and this leftover chicken went into my freezer. The other day I was ready to use my leftover bbq chicken in the freezer and decided to use that chicken to make bbq chicken quesadillas. Now if you want to can just cook up come chicken and add bbq sauce to it or buy a rotisserie chicken and tear it up and add bbq sauce to it, but this slow cooker barbecue chicken is delish! The quesadillas were excellent and the who family loved them, even my picky daughter ate them up.

Barbecue Chicken Quesadillas
2 Tablespoons melted butter
6 flour tortillas
shredded cheddar cheese (or whatever cheese you like)
diced red onion (can use green onion in it’s place)
leftover slow cooker barbecue chicken or your own bbq chicken
Brush one side of the tortilla with melted butter. Place butter side down in frying pan. Sprinkle the entire tortilla with a light layer of cheddar cheese and sprinkle on some red onion. Cook over medium heat until under side is browned and crisp and cheese is melted. Top half the tortilla with warmed bbq chicken and fold tortilla in half, then cut in half so you have two triangles. Enjoy.

Black Bean and Pineapple Salsa | Real Mom Kitchen August 22, 2014 - 6:15 am

[…] The recipe is very similar to a recipe that I have posted before called Black Bean and Corn Salsa which is also known as Cowboy Caviar.  I gave this salsa about an hour to sit in the fridge and it was delicious.  However, most of the time these kind of salsas only get better the longer you can let them sit and let the flavors marinade.  The pineapple added a nice element of sweetness.  I found it similar in flavor to a mango salsa i have had in Mexican restaurants.  Yummy and easy – who could ask for anything more?  This is a fun side to any Mexican dish.  I served it with Barbecue Chicken Quesadillas. We do the same thing except we add corn and black beans too. It’s such an easy but tasty twist to regular quesadillas, I love it!
