Barbecue Chicken Quesadillas

They have BBQ chicken pizza, so why not barbecue chicken quesadillas! A while back, I had some family over for dinner, and I made slow cooker barbecue chicken. I ended up having some leftovers after our gathering. I never mind having leftovers, so this leftover chicken went into my freezer.

The other day, I was ready to use my leftover barbecue chicken from the freezer and decided to use that chicken to make these barbecue chicken quesadillas. Now, if you want, you can just cook up some chicken breasts and add BBQ sauce to it. Or feel free to buy a rotisserie chicken and tear it up, then add BBQ sauce to it. However, this recipe for slow cooker barbecue chicken that I linked to is delish!

I added cheddar cheese and red onion to them. However, the red onion is also fine to swap with green onion. The quesadillas were excellent and the whole family loved them, even my picky daughter ate them up.

  • BUTTER
  • FLOUR TORTILLAS
  • CHEDDAR CHEESE (OR WHATEVER CHEESE YOU LIKE)
  • RED ONION (CAN USE GREEN ONION IN IT’S PLACE)
  • LEFTOVER SLOW COOKER BARBECUE CHICKEN OR YOUR OWN BBQ CHICKEN

Prepare the Tortilla: Start by brushing one side of a tortilla with melted butter for an irresistible golden crust. Place it butter-side down in a preheated large skillet.

Add the Cheese and Onions: Sprinkle a generous layer of shredded cheese evenly across the tortilla. For an extra burst of flavor, add diced red onions on top of the cheese.

Cook to Perfection: Cook over medium heat until the underside of the tortilla turns golden and crispy, and the cheese melts to gooey perfection.

Add BBQ Shredded Chicken: On one half of the tortilla, layer warmed BBQ chicken mixture. The smoky sweetness pairs beautifully with the cheesy base.

Fold and Cut: Once the tortilla is golden brown, carefully fold the tortilla in half, pressing gently to seal in the filling. Remove from the pan and cut the quesadilla into two triangles using a pizza cutter, ready to serve. Serve your BBQ Chicken Quesadillas warm and enjoy every crunchy, cheesy, and flavorful bite.

Ingredients
  

  • 2 Tbsp melted butter
  • 6 flour tortillas
  • shredded cheddar cheese or whatever cheese you like
  • diced red onion can use green onion in it’s place
  • 2 cups leftover slow cooker barbecue chicken or your own bbq chicken

Instructions
 

  • Brush one side of the tortilla with melted butter. Place butter side down in frying pan. Sprinkle the entire tortilla with a light layer of cheddar cheese and sprinkle on some red onion.
  • Cook over medium heat until under side is browned and crisp and cheese is melted. Top half the tortilla with warmed bbq chicken and fold tortilla in half, then cut in half so you have two triangles. Enjoy.
