I am finally at home with my daughter.  No more hospital for now.  To celebrate being home, I have a great giveaway for you today. It is courtesy of MyBlogSpark. I also have a yummy cake recipe that I adapted from Your Home Based Mom.  After the success with the last banana pecan cake recipe I tried that used a cake mix, I wanted to try this variation.  The cake layers are filled with yummy fresh bananas and banana filling.  Then it’s all topped off with whipped cream.  This banana layer cake is a light and delicious variation from the usually cream cheese frosting version.  Loved it.  YUMMY!

Ingredients
  

Cake:

  • 4 very ripe mashed bananas
  • 1 box white cake mix
  • ¾ cup water
  • ¼ cup oil
  • 3 whole eggs
  • ¾ tsp baking soda
  • 1 tsp baking powder

Filling:

  • 1 large box of cooked banana cream pudding not the instant
  • 5 additional bananas

Frosting:

  • 2 cups whipping cream
  • 4 heaping Tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • chopped walnuts

Instructions
 

  • Mix all the cake ingredients except bananas for 2 minutes, medium speed.  Add bananas and blend well.
  • Bake in 2 greased & floured round cake pans, following baking recommendations on box. Cool on racks. I made the cake the day before.
  • Make pudding according to package directions.  I make it using the microwave directions.  If you do that, watch it on the last 2 minutes.  Min overflowed and made a mess in my microwave.  Let pudding cool
  • Whip whipping cream with powdered sugar and vanilla.
  • Split each cake round in half.  Place one cake on serving dish.  Spread with 1/3 of pudding mixture topped with banana slices.  Repeat with remaining cake, pudding, and bananas. Frost the whole outside of the cake with whip cream & sprinkle chopped walnuts on top.  I used banana slices on top of mine but think the walnuts would have been better.

  5. Strawberry Sundae! Brings back the memories of Sunday afternoons, walking in the park with Nana after eating one of my mother’s fabulous home cooked Sunday dinners. Walking, and sometimes skipping, listening to Nana talk. Sometimes it would be about Nana’s memories of life in the old country, sometimes life lessons on propriety and etiquette, and sometime just silent walks enjoying each other’s company. The walks and the talks always varied, but the one thing that remained constant was stopping at a little ice cream stand on the edge of the park for a Strawberry Sundae. Cool, creamy, strawberry deliciousness savored on the tongue slowly, trying to make the sundae and my special time with Nana last as long as it could.
    Nana, the park, and the ice cream stand are long gone, living only in memories of my childhood. I still love Strawberry Sundaes, but can’t afford the extra calories in my daily diet. At 90 calories a serving and no artificial flavors, sweetners, or high fructose corn syrup, Yoplait Splitz allows me to visit Nana’s Sunday memories in my heart with a Strawberry Sundae anytime I want.

  7. I would just love to try the “Rainbow Sherbet” yogurt! Sounds delicious! My husband loves yogurt but I have just recently acquired a taste for it. Some things I might buy an off brand but not yogurt! Yoplait has a superior product and one taste is all it takes to convince you of that!

  8. Yogurt that tastes like ice cream sundaes? I am sure I would LOVE all of them. However, if I have to choose one then Rainbow sherbet for me.

  9. I would Love, Love, Love to try any of these new yoplait flavors. I have a really hard time getting my two yougest to drink milk, so I am always looking for new things for them to eat or drink that are high in calcium and vitamin D. But I think I would have to choose the Rainbow Sherbet for there best intreset.

  11. I think that the Strawberry Sundae would be the one I would try but I am a little curious about the Rainbow Sherbet maybe I would try that one if they were all out of the Strawberry.
