After School Peanut Butter and Honey Popcorn

Today is the last day of Fall Snack Week.  Hasn’t it been fun?  I have loved it and I have saved my favorite treat for very last.  It happens to involve popcorn, peanut butter, and honey.  This after school peanut butter and honey popcorn is my new favorite and highly addictive treat.  It also comes together in a jiffy.

I found this yummy coated popcorn recipe over at Prudence Pennywise.  Love ya Prudy and so glad you shared this delicious recipe! This recipe is so easy to make that you simply must make it!  You really have no excuse unless, that is, you have a peanut butter allergy.

The popcorn has a perfect amount of peanut butter flavor. The coating is soft, chewy, and so ooey gooey.  It would also be excellent to drizzle with some melted chocolate chips over all of it.  You could use white, semi-sweet, or milk chocolate. Then you could have a peanut butter chocolate popcorn.  It would be excellent to give as a gift too.  I think I need to go whip up another batch of this after school peanut butter and honey popcorn right now.

  • POPPED POPCORN
  • SUGAR
  • HONEY
  • PEANUT BUTTER
  • VANILLA

Prepare the Popcorn: Place the popped popcorn kernels in a large mixing bowl, making sure to remove any unpopped kernels.

Make the Syrup: In a small saucepan on the stovetop, combine the sugar and honey. Heat the mixture over medium heat, bringing it to a rolling boil.

Mix in the Peanut Butter: Once the syrup has reached a rolling boil, remove the saucepan from the stove and stir in the peanut butter until the mixture is smooth. If you’re using vanilla extract, stir it in at this point for added flavor.

Coat the Popcorn: Pour the warm peanut butter coating over the popcorn. Gently stir to coat the popcorn evenly with the peanut butter sauce. Alternatively, you can place the popcorn in a large paper bag, pour the syrup over it, and toss in the bag to coat the popcorn evenly—this method works wonderfully and makes cleanup easy!

Cool and Serve: Spread the coated popcorn out onto a baking sheet lined with parchment paper in an even layer. Let it cool for a few minutes before serving. Enjoy this sweet, peanut-buttery treat!

Can I use a different sweetener instead of sugar?
Yes, you can substitute granulated sugar with coconut sugar, maple syrup, or even agave syrup. Keep in mind that substitutions may alter the flavor slightly but will still be delicious!

Can I use a different type of nut butter?
Absolutely! You can use almond butter, cashew butter, or sunflower seed butter if you have allergies or want to try a different flavor. Just ensure it’s smooth for easy mixing.

How do I prevent the popcorn from becoming soggy?
To avoid soggy popcorn, mix the peanut butter syrup with the popcorn quickly while it’s still warm to coat it evenly. Spreading it out on a cookie sheet r pan to cool ensures the popcorn retains its crunch.

Can I use microwave popcorn?
Yes, popping microwave popcorn works fine. Just make sure to choose plain, unsalted, or lightly salted popcorn, so it doesn’t clash with the sweetness of the syrup.

Can I add extras to the popcorn?
Of course! You can add mini chocolate chips, chopped nuts, or even pretzels after coating the popcorn with syrup for added texture and flavor.

How do I store leftover popcorn?
Store any leftover popcorn in an airtight container at room temperature for up to 2 days. For the best texture, enjoy it the same day it’s made.

Can I omit the vanilla?
Yes, vanilla is optional and simply adds a subtle flavor boost. If you don’t have it or prefer not to use it, the recipe will still turn out delicious.

Ingredients
  

  • 8 cups popped lightly salted popcorn low-fat microwave popcorn is what I used
  • ½ cup sugar
  • ½ cup honey
  • ½ cup peanut butter
  • ½ tsp vanilla optional, but I totally used it!

Instructions
 

  • Place popcorn in a large bowl. In a small saucepan, combine sugar and honey. Bring to a rolling boil.
  • Remove from heat and stir in peanut butter until smooth. Add vanilla, if using.
  • Pour peanut butter syrup over popcorn and stir to coat. (You can place the popped popcorn in a large paper bag, then pour over the syrup and shake.  That’s how I did it)  Spread out on to a cookie sheet to cool for a few minutes and enjoy!

  1. Do you think this would be good with just the honey and not the half a cup of sugar too? I saw a recipe the other day that just had honey and peanut butter added, not the added sugar also… I was just trying to have less sugar. Thanks for any info

    This peanut butter popcorn is awesome! I have made ot several times already. I add pretzels to the popcorn before I put the syrup on it and then shake it up, also after putting it on the pan to cool I sometimes sprinkle 2 tablespoons of mini chocolate chips on top. Definitely a great sweet and salty snack. My whole family devours it.

    Talk about SCRUMPTIOUS!! I made it for our 6 year old as a treat and happened to, you know, eat some for myself…WOW So good….
    I haven’t made my own flavoured popcorn before, it’s always just lightly salted..eay that way i guess.

    Made this and I can’t stop snacking! I just have a question…when it cools and dries, is it supposed to be DRY to the touch or still a little gooey/moist after sitting for a while? (not that it’s going to last that long at my house!) Thanks for the yummy recipe!!

  19. I love popcorn recipes! This is one I have never heard of, peanut butter and honey makes sense on bread, why not popcorn?
