Strawberry Vinaigrette

Valentine’s day is a week away and I have a few fun recipe that would be perfect for the day that I will be sharing this week. First up is a simple strawberry vinaigrette recipe. Not only is it a beautiful pink color, but it has a wonderful strawberry flavor.
This is a copy cat version of the one served at one of my favorite restaurants, Cafe Zupas. The pink color makes it so festive for Valentine’s Day. Plus, you can get creative with the salad you make to go with it. I personally love to use it on a spinach salad that includes, strawberry slices, dried cranberries, goat cheese, and pistachios.
All you need to make this is some fresh strawberries along with some red wine vinegar, sugar, salt, and canola oil. You add the strawberries, vinegar, sugar, and salt to a blender and blend until smooth. Then with the blender running, slowly drizzle in the oil through the opening in the lid. This is was causes the dressing to emulsify together. This results in a thick and cream dressing rather than an oily one.

Here is what you need to make the
Strawberry Vinaigrette
- FRESH STRAWBERRIES
- RED WINE VINEGAR
- SALT
- SUGAR
- CANOLA OIL

Ingredients
- 6 good sized strawberries
- ¾ cup red wine vinegar
- ½ tsp salt
- ½ cup sugar
- 1 cup canola oil
Instructions
- Cut the green tops off the strawberries and place them in a blender along with the vinegar, salt, and sugar. Blend until smooth.
- Open the small opening in the lid of your blend. While blending, slow pour in the oil.
