South Carolina Bird Dogs

I recently came across a fun Southern sandwich called a South Carolina Bird Dog. It is similar to a hot dog, but instead of placing a beef frank inside the bun, you use a crispy chicken strip. I had never heard of a bird dog before, but the idea immediately sounded delicious and incredibly clever.

These sandwiches are especially well known in South Carolina, where places like Nick Henry’s and J C’s Sandwich Shoppe are famous for serving them. They have developed quite a following and are often described as a signature or legendary menu item.

Along with the crispy chicken strip and hot dog bun, a traditional bird dog includes three simple but flavorful toppings. Each sandwich is layered with cooked bacon, shredded cheddar cheese, and a generous drizzle of honey mustard sauce.

I used Sweet Baby Ray’s Honey Mustard Dipping Sauce because it is convenient and has a great balance of sweet and tangy flavor. A homemade honey mustard sauce would also be easy to make using mayonnaise, mustard, and honey.

These South Carolina Bird Dogs were a big hit with my family. The combination of crispy chicken, smoky bacon, melted cheddar, and sweet honey mustard made every bite delicious. It is such a creative way to use hot dog buns, and now I am already thinking about other fun versions of a bird dog to try.

  • BACON – Bacon adds smoky, salty flavor and a crisp texture that pairs perfectly with the chicken and cheese. Cook it until crisp, then drain it well before adding it to the sandwich.
  • BREADED CHICKEN FINGERS – Breaded chicken fingers replace the traditional hot dog and create the hearty center of the bird dog. Use fully cooked, crispy chicken strips that fit comfortably inside the buns.
  • CHEDDAR CHEESE – Cheddar cheese adds rich, savory flavor and helps tie the chicken and bacon together. Shredded cheese melts easily, but thin slices can also be used.
  • HONEY MUSTARD DRESSING OR SAUCE – Cheddar cheese adds rich, savory flavor and helps tie the chicken and bacon together. Shredded cheese melts easily, but thin slices can also be used.
  • HOT DOG BUNS – Hot dog buns hold all of the ingredients together and give the bird dog its signature shape. Soft buns work well, but lightly toasting them adds flavor and helps keep them from becoming soggy.

Can I use homemade chicken tenders?
Absolutely. Homemade breaded or grilled chicken tenders will both work. Breaded chicken gives the sandwich the most traditional crispy texture.

What kind of bacon works best?
Regular-cut bacon works well because it becomes crisp without being too bulky in the bun. Thick-cut bacon can also be used, but you may want to break each slice into smaller pieces.

Can I use a different cheese?
Yes. Cheddar is traditional, but Monterey Jack, pepper Jack, Colby Jack, or American cheese would also be delicious.

Should I melt the cheese?
You can serve the cheese shredded and unmelted, or place the assembled bird dogs under the broiler briefly until the cheese melts. Watch them closely so the buns do not burn.

Can I toast the hot dog buns?
Yes. Lightly toasting the buns adds flavor and helps prevent the honey mustard from soaking into the bread too quickly.

Can I make these ahead of time?
The individual components can be prepared in advance, but the sandwiches are best assembled just before serving. This keeps the chicken and bacon crispy and prevents the buns from becoming soggy.

How do I keep the chicken fingers crispy?
Cook the chicken just before assembling and avoid adding the honey mustard until serving time. An air fryer or oven usually keeps breaded chicken crispier than a microwave.

What can I serve with South Carolina Bird Dogs?
French fries, tater tots, coleslaw, potato salad, pasta salad, baked beans, or fresh fruit all pair well with them.

Can I make a spicy version?
Yes. Use pepper Jack cheese, spicy breaded chicken, hot honey mustard, sliced jalapeños, or a drizzle of hot sauce.

  • Cook the chicken until extra crispy. Prepare the chicken fingers in an air fryer or oven rather than the microwave. A crisp coating gives the bird dogs their best texture and keeps them from feeling soft or soggy.
  • Toast the buns lightly. A quick toast adds flavor and helps the buns hold up to the chicken, cheese, bacon, and honey mustard. Be careful not to overtoast them, since you still want the buns soft enough to fold around the filling.
  • Use fully cooked, crisp bacon. Cook the bacon until crisp, then drain it well on paper towels. Breaking each slice into smaller pieces makes the bird dogs easier to assemble and eat.
  • Melt the cheese for extra flavor. Add the shredded cheddar while the chicken is still hot, or place the assembled bird dogs under the broiler briefly. Watch them closely so the cheese melts without burning the buns.
  • Add the honey mustard just before serving. Drizzle the sauce over the bird dogs at the last minute to keep the chicken coating and buns from becoming soggy. Serve extra honey mustard on the side for dipping.
