This Fiesta Ranch Chicken Salad has quickly become one of my new favorite salads. It makes a big batch, which is perfect if you are feeding a crowd, but you can easily cut the recipe in half for a family dinner.
For the greens, I like to use a spring mix because it gives the salad a nice variety of texture and flavor. That said, you can absolutely use your favorite lettuce here. Romaine would also be a delicious choice and would add a nice crisp bite.

Then comes the chicken. All you need is 2 cooked chicken breasts, and you can prepare them however works best for you. Grilled chicken is especially tasty in this salad, but rotisserie chicken is a great shortcut if you want to make things quick and easy.
This salad is loaded with so many delicious ingredients. It has plenty of fresh veggies like corn, red pepper, orange pepper, carrots, red onion, and grape tomatoes. Then you also get cheese and cilantro mixed in for even more southwest flavor. My favorite fun addition, though, is the honey BBQ Fritos. If you buy the name-brand Fritos, they usually come in a spiral shape, but I used the Great Value version, and those were more like the traditional strip shape.
The dressing is what really brings everything together, and it is so good. I have even started using it for other salads and dishes beyond this one. The secret is a packet of Hidden Valley Fiesta Ranch dip mix, which gives the dressing that classic ranch flavor with a little extra kick.

Wait to add the honey BBQ Fritos until just before serving, arranging them around the edges so they stay nice and crunchy. You can also build the salad the same way in individual bowls or on plates if you prefer.
To make the dressing, add all of the dressing ingredients to a blender bottle and shake until smooth and well combined. You can also whisk everything together in a bowl if that works better for you. For the best flavor, refrigerate the dressing for at least 30 minutes before serving. This recipe serves 12.

- 2 chicken breasts cooked and diced
- 15 oz can black beans rinsed and drained
- 2 cups frozen corn thawed
- 2 cups Mexican blend cheese shredded
- 1 cup cilantro chopped
- 1 red bell pepper sliced
- 1 orange pepper sliced
- 1 cup grated carrots
- ½ red onion thinly sliced
- 1 pint grape tomatoes or cherry tomatoes, cut in half
- 2 cups Honey BBQ Spiral Fritos
DRESSING:
- 1 pkg Hidden Valley Fiesta Ranch Mix
- 1 cup mayonnaise
- â…“ cup sour cream
- 1 cup milk
Instructions
- In a large salad bowl or platter, place the greens. Then arrange to vegetables and cheese in piles over the greens. Then arrange the Fritos around the edges of the salad just before serving. This will keep them crunchy. You can prepare the salad the same way if making individual salads in salad bowls or plates.
- In a blender bottle, add all of the dress ingredients and shake until well blended. Or you may put all of the indreients in a bowl and whisk together. I like to give the dressing at least 30 minutes in the refrigerator before using. Serves 12.
