At my house, I usually opt for frozen vegetables for sides because they are convenient and budget friendly. I can also say that I almost never buy fresh green beans. My family actually prefers canned green beans. For me, the canned version is my least favorite. I’d rather have frozen.

However, since this is a special Valentine’s meal, I splurged and got some fresh green beans to make these skillet dill green beans. This recipe uses fresh dill which is also something that I usually don’t purchase, but for this it was really worth it. The fresh adds such an amazing flavor. I love it when you have special occasions that you only bring out special foods for. It just adds to the occasion making it more memorable.

The dill was the perfect compliment to these fresh green beans. The fresh dill just added to the freshness of the beans. Add really it doesn’t take that much more effort to make these green beans. They are ready in about 15 minutes.

Ingredients
  

  • 4 Tbsp softened butter
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 1 bunch fresh dill minced
  • 1 pound green beans ends trimmed
  • 2 Tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper

Instructions
 

  • In a bowl, combine butter, 1/2 tsp kosher salt, 1/4 tsp pepper, and dill together. Set aside.
  • In a skillet, cooked trimmed green beans with olive oil and season with 1/2 tsp salt and 1/4 tsp pepper. Cook until tender crisp. Remove from heat.
  • Add the dill butter to the green beans and toss to coat. Serves 4.
