Ranger Cookies

Today is the last day of cookie week. We are ending with one of my favorite cookies while growing up, Ranger Cookies.  If you have never had a ranger cookie before, you must try one!

These ranger cookies include oats, coconut, and the best part – rice krispies.  They give this cookie little pockets of crunch.  I do think they are best if you eat them no later than the day after you make them.

Here is what you need to make the

Ranger Cookies

  • SHORTENING (I HAVE USED 1/2 CUP BUTTER AND 1/2 CUP SHORTENING)
  • SUGAR
  • BROWN SUGAR
  • VANILLA
  • EGGS
  • FLOUR
  • BAKING SODA
  • BAKING POWDER
  • SALT
  • RICE KRISPIES CEREAL
  • ROLLED OATS
  • COCONUT

Ranger Cookies


Ingredients

Scale
  • 1 cup shortening (I have used 1/2 cup butter and 1/2 cup shortening)
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups Rice Krispies cereal
  • 1 1/2 cup rolled oats
  • 1 cup coconut

Instructions

  1. In the bowl of a stand mixer, cream together shortening, sugars, and vanilla. Add eggs one at a time and blend until smooth.
  2. In another bowl, whisk together flour, soda, baking powder, and salt the add to creamed mixture.
  3. Stir in rolled oats, Rice Krispies, and  coconut until well blended. Dough will be crumbly.
  4. Shape into walnut sized balls or use a cookie scoop and bake on ungreased cookie sheet for 10 minutes at 350 degrees.

I made them using half shortening and half butter and they were award- winning, nice and chewy. They don’t come out as good when margarine is substituted for the butter. You may save a bit of money but you lose on the quality.

I would like to try this recipe with putting the coconut in a food processor to make coconut finer and then add about a cup of pecans to chop them up. I think I would also half the shortening and add butter for the other half.

I love ranger cookies! My grandma made these when I was a kid and I still make them. Her receipe called for butter and cornflakes, instead of rice crispies cereal.

I LOVE ranger cookies sooo much. thanks for this recipe. I will probably use margarine because thats what my mom buys (no judgement here!). I like them with ground up M&Ms in them.

These are my favorites–except I add pecans too. Also I have used butter.

Do they have to be made with shortening? It is so unappetizing. I would much prefer to bake with butter.
