Its pumpkin spice season. You can find pumpkin spice in many places and you can even find it on the cereal isle. Cherrios has a pumpkin spice version and it can be made into these fabulous pumpkin spice Cherrio bars.

These are similar to a rice krispie treat but they have the addition of caramel. Caramel pairs so well with the pumpkin spice. However, it doesn’t stop there. They also get a drizzling of melted white chocolate over the top of them.

Pumpkin Spice Cherrio Bars

Ingredients

6 cups Pumpkin Spice Cheeriosâ„¢
1 (11 oz) bag caramels, unwrapped
2 Tbsp water
2 cups miniature marshmallows
1/2 cup white vanilla baking chips
1 tsp vegetable oil

Instructions

  1. Spray the bottom and sides of a 13×9-inch pan with cooking spray. Spray large bowl with non-stick cooking spray. Place cereal in bowl and set aside.
  2. Spray medium microwavable bowl with cooking spray; add caramels and water. Microwave uncovered on High 2 minutes to 2 minutes 30 seconds, stirring after each minute, until mixture is smooth. Remove from microwave. Mix in marshmallows until melted and smooth.
  3. Pour the caramel mixture over cereal in bowl; stir until cereal is evenly coated. Pour cereal mixture into the prepared 9 x 13 pan. With back of spatula sprayed with cooking spray, press mixture in pan until even.
  4. In small microwavable bowl, add in baking chips and oil. Microwave uncovered on High 1 minute to 1 minute 30 seconds, stirring after 1 minute, until mixture is smooth. Drizzle melted mixture over top of cereal mixture. Refrigerate until mixture is firm and chocolate is set, about 30 minutes.
