King Ranch Chicken Casserole

I made a King Ranch Chicken Casserole. This consists of layers of corn tortillas, creamy chicken mixture, and cheese (the ultimate baked on culprit). Armed with the new PAM, I went into battle.

The casserole itself was a family pleaser, and the new PAM left me a winner with hardly any clean up. There was no need for soaking or scrubbing. There was no casserole left sticking to the pan. King Ranch Chicken Casserole


Ingredients

Units Scale
  • PAM Original No-Stick Cooking Spray
  • 1 (10 3/4 oz) can condensed cream of chicken soup
  • 1 (10 3/4 oz) can condensed cream of mushroom soup
  • 1 (10 oz) can Ro*Tel Original diced tomatoes and green chilies (Next time I will use mild, the original was too hot for my youngest kiddos)
  • 2 cups diced cooked chicken
  • 1/4 cup diced green onion plus extra for garnish if desired
  • 12 (6-inch) corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 325 degrees
  2. Spray a 9 x 13 inch baking dish with PAM No-Stick cooking spray and set aside.
  3. In a large bowl, combine the soups and Ro*Tel. Stir until well blended.
  4. Add chicken and green onion to the mixture and stir until well combined.
  5. Take half of the tortillas and tear into bite sized pieces and place in the bottom of the prepared baking dish.
  6. Place about 2 cups of the chicken mixture evenly over the tortillas pieces followed by 3/4 cup of the shredded cheese.Repeat layer two more times.
  7. Bake at 325 for 40 minutes or until hot and bubbly.

I think your math is wrong. You have two cups of shredded cheese but you are using 3/4 of a cup per layer. For three layers, you should be using 2/3 of a cup of cheese.

My favorite recipe to make is lasagna but after looking at your recipe I remember how much I always enjoyed it. I didn’t enjoy the clean up but now that Pam is even better I’m going to have to try it again.

All I know is I get so frustrated when I run out of PAM because I know my recipes will stick to the pan and not turn out how I would like them to. My favorite recipe to use PAM for is a delicious sausage, egg, breakfast casserole! Yum!

I use Pam for everything but the most important use is for when i make my homemade brownies with syrup in the middle.they turn out perfect every time. The generic store brands just dont so as well as PAM so it is my only choice

I can’t see this post for the recipe or the giveaway for some reason. Anyway, I’m going to assume to post something about Pam to enter. I LOVE Pam. I recently bought a store-brand super cheap one. I can’t survive without Pam. I use it for EVERYTHING! If you spray your plastic containers before putting a red sauce in, your containers don’t become discolored. YAY!!

I have used Pam for years on everything…bundt pans for Monkey Break, anything I prepare in the crockpot has a spray of PAM first and also I use it for every baking need. I even use it for all my grandson Aleksei’s cooking in my saute pans…he is allergic to olive oil and dairy and PAM is perfect for his cooking!!!

I use PAM in this recipe. Not only does it keep the chicken from sticking, but you also spray the tops of the chicken before baking to keep the chicken extra moist and give the topping a crunch without the added fat of frying! YUM!!!

I use PAM for EVERYTHING!!! It keeps everything from sticking to the pan. Most recently I learned that if you spray a little on your hair brush before you use it, it will control fly away/static hair !!!! Now that’s a universal product!

I have a cheesy chicken and rice casserole that needs Pam! Otherwise half of it stays in the pan.

I use regular Pam, but I LOVE using Pam for Baking when I make muffins or cupcakes. They come out so perfectly that I don’t have to mess with the annoying liners.
