King Ranch Chicken Casserole
I made a King Ranch Chicken Casserole. This consists of layers of corn tortillas, creamy chicken mixture, and cheese (the ultimate baked on culprit). Armed with the new PAM, I went into battle.
The casserole itself was a family pleaser, and the new PAM left me a winner with hardly any clean up. There was no need for soaking or scrubbing. There was no casserole left sticking to the pan. PrintKing Ranch Chicken Casserole
Ingredients
- PAM Original No-Stick Cooking Spray
- 1 (10 3/4 oz) can condensed cream of chicken soup
- 1 (10 3/4 oz) can condensed cream of mushroom soup
- 1 (10 oz) can Ro*Tel Original diced tomatoes and green chilies (Next time I will use mild, the original was too hot for my youngest kiddos)
- 2 cups diced cooked chicken
- 1/4 cup diced green onion plus extra for garnish if desired
- 12 (6-inch) corn tortillas
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 325 degrees
- Spray a 9 x 13 inch baking dish with PAM No-Stick cooking spray and set aside.
- In a large bowl, combine the soups and Ro*Tel. Stir until well blended.
- Add chicken and green onion to the mixture and stir until well combined.
- Take half of the tortillas and tear into bite sized pieces and place in the bottom of the prepared baking dish.
- Place about 2 cups of the chicken mixture evenly over the tortillas pieces followed by 3/4 cup of the shredded cheese.Repeat layer two more times.
- Bake at 325 for 40Â minutes or until hot and bubbly.

I think your math is wrong. You have two cups of shredded cheese but you are using 3/4 of a cup per layer. For three layers, you should be using 2/3 of a cup of cheese.
Carmelized Sweet Potato Casserole … so yummy but oh so stuck to the pan without PAM 🙂 made that mistake only once!

My favorite recipe to make is lasagna but after looking at your recipe I remember how much I always enjoyed it. I didn’t enjoy the clean up but now that Pam is even better I’m going to have to try it again.

Use Pam for my ‘from scratch’ buttermilk biscuits, among many, many other items. Newly retired and love my baking!
I use Pam for everything but the most important use is for when i make my homemade brownies with syrup in the middle.they turn out perfect every time. The generic store brands just dont so as well as PAM so it is my only choice

I spray Pam on my measuring utensils when I’m cooking with honey or molasses…the sticky stuff slides right out!
Its hard to pick just one meal because I use Pam for everything. I guess where I like to use it the most is in the crockpot, there is nothing worse than cleaning up stuck on food in the crockpot!

I can’t survive without Pam. I use it for EVERYTHING! If you spray your plastic containers before putting a red sauce in, your containers don’t become discolored. YAY!!
I have used Pam for years on everything…bundt pans for Monkey Break, anything I prepare in the crockpot has a spray of PAM first and also I use it for every baking need.
