Apricot Sauce and Pineapple-Orange Sauce

Today I am sharing with you the two dipping sauces that I made to go along with the coconut chicken.  There is an Apricot Sauce and Pineapple-Orange Sauce. I made two figuring we would try both and I would post the favorite.

The results of the taste test were – we liked both.  We really couldn’t decide which we liked best.  They were different but equally good.

Both sauces begin with apricot preserves as the base. The apricot sauce has ketchup and mustard added to it.  This sauce has more of a savory flavor.  The mustard gives it a little kick.

The pineapple-orange version is light, sweet, and refreshing.  It gets a nice punch of freshness from orange zest and some sweetness from pineapple. So you pick between the Apricot Sauce and Pineapple-Orange Sauce. See which one you like best.
