Apricot Sauce and Pineapple-Orange Sauce

Today I am sharing with you the two dipping sauces that I made to go along with the coconut chicken.  There is an Apricot Sauce and Pineapple-Orange Sauce. I made two figuring we would try both and I would post the favorite.  The results of the taste test where – we liked both.  We really couldn’t decide which we liked best.  They were different but equally good.

Both sauces begin with apricot preserves as the base.  The apricot sauce has ketchup and mustard added to it.  This sauce has more of a savory flavor.  The mustard gives it a little kick.  The pineapple-orange version is light, sweet, and refreshing.  It gets a nice punch of freshness from orange zest and some sweetness from pineapple. So you pick between the Apricot Sauce and Pineapple-Orange Sauce.

Pineapple-Orange Sauce

  • 1/2 cup apricot preserves
  • 1/4 cup crushed pineapple, undrained
  • 1 tsp orange zest

Instructions

  1. Combine ingredients together and stir until well blended.  Serve with coconut chicken.

In searching for new recipes for our freezer meal swap, I found the coconut chicken recipe that looks amazing! I would like to make the sauces as well to go along with it, but are they able to be frozen as well? k

I love this so much. it works well with chicken. I just had to try this once i saw it. It Is SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO GOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOD!!!!!!!!!!!!!!!!!!!!!!!!!!!!! 🙂
