Easy Pineapple Coleslaw

When I was making pulled chicken slider sandwiches (which I shared yesterday!), I knew I wanted a refreshing coleslaw to go with them. I have a few go-to slaw recipes, but this time, I was craving something with a tropical twist—easy pineapple coleslaw. I’ve enjoyed it before at restaurants and barbecues, but I had never made it myself. So, I decided to adapt a recipe I found from Taste of Home to create my own version.

This recipe is incredibly simple, using just four ingredients, yet delivers a delicious balance of sweetness and crunch. If you find that the pineapple doesn’t add quite enough sweetness, you can always mix in a little sugar to enhance the flavor. This coleslaw is a great standalone side dish and pairs beautifully with pulled chicken sliders, adding a fresh and tangy contrast to the savory meat.

Can I use fresh pineapple instead of canned?
Yes! Fresh pineapple adds a bright, natural sweetness. However, canned pineapple works well because the canning process removes an enzyme that can affect the dressing’s texture. If using fresh, make sure to chop it finely and drain excess juice.

How long does pineapple coleslaw last?
Store it in an airtight container in the refrigerator for up to 3 days. The flavors will meld over time, but the cabbage may soften slightly.

Can I make pineapple coleslaw ahead of time? Absolutely! Chilling for at least an hour before serving is best to let the flavors blend.

What can I serve with pineapple slaw?
It pairs well with BBQ dishes, grilled meats, tacos, pulled pork sandwiches, or even as a topping for burgers.

How can I make it creamier?
For a richer texture, try adding Greek yogurt, sour cream, or coconut cream to the dressing.

Is there a great topping to add to this recipe?
Some chopped fresh cilantro or diced green onions make great toppings.

  4. I made this to top some BBQ pork sandwiches. A BBQ restaurant in the area has pineapple in their coleslaw so I was hoping this recipe was similar.
I liked it and it was good, but I think next time I will use Miracle Whip instead of the mayo. For me, something was missing that would make it more like the restaurant recipe, and I think the salad dressing might help that.
    Thanks for the recipe!!
