So for today’s fab five I decided to share my five favorite zucchini recipes from my archives. On one, I kind of cheated and I am giving you two recipes, but they are both similar and equally good. This was tough to do because there are so many yummy ones, but I did it. If you want to you can always look at all my past zucchini recipes for even more yummy ideas. One that I just love but didn’t included in the fab five is the pineapple zucchini cake. So make it too, it’s divine! Also please look at a special addition to the bottom of today’s post.
Last summer I was absolutley in love with this zucchini flat bread. I enjoyed it for many of my lunches.
I also enjoyed these zucchini marinara sub sandwiches for lunch last year too! Just like a meatball sub but made with zucchini, delicious!
Over the years, I found that zucchini and blueberries go well together. I love to turn them into this yummy Lemon Zucchini Blueberry Cake with Lemon Cream Cheese Frosting or in an equally good blueberry zucchini bread.
This panko encrusted fried zucchini is awesome!
Last is my families absolute favorite way to eat zucchini in these zucchini chocolate chip muffins!
I also have a special addition to today’s post. Fellow food blogger Jennifer Perillo’s husband, Mikey, died suddenly from a massive heart attack. On Tuesday, Jennie posted a beautiful post for Mikey. She asked us all to make Peanut Butter Pie, Mikey’s favorite, and share it with the ones we love and celebrate Mikey’s life. Life can change in the blink of an eye. Tell the ones you love that you love them, kiss them, hug them. You never know when it may be your last time to do so. So for Mikey, I am sharing with you my Chunky Money Peanut Butter Pie.
