Weekday Waffles and 29 Filling Breakfast Recipes

Yay! It is officially September today and I’m sharing a recipe for Weekday Waffles. In my book that means fall, even though the official day isn’t until Sept. 23.
I love fall or autumn, whatever you prefer to call it, it is my most FAVORITE season. The kids go back to school, the weather starts to cool, and it’s time for baking with things like pumpkin and apple (watch for apple week next week)!

With the kids going back to school it is also the perfect time to focus on awesome breakfast recipes. Did you know that the entire month of September is National Breakfast Month? Yep, isn’t that just so spectacular! A whole month dedicated to breakfast, which is probably my most favorite meal.
So to celebrate this spectacular month of September dedicated to breakfast, I am sharing breakfast recipes with you all week! Plus, to start the week off I have teamed up with some other spectacular bloggers to give you a collection of 29 breakfast recipes to get your tummy filled as you start your day. Weekday Waffles
Along with this great collection, this tasty new weekday waffle recipe I am also sharing is one that you simply all MUST have. We do love waffles at our house and have tried our fair share of varieties here. This waffle is my new go-to from scratch waffle recipe. I am calling it weekday waffles because it is easy enough to make on a weekday morning before work and school.
There is no need to whip egg whites for this waffle. You just need a wet bowl and a dry bowl them combine together and voila – tasty waffles made from scratch in no time.
To speed up the process you could spend sometime on day mixing up batch of the dry ingredients, to make things even easier if you’d like. Just keep bags of the dry mix ready to go in the pantry.
Now the recipe does use melted butter, which will melt in the microwave in just a few seconds. However, to make life easier again and have your waffles be a little more healthy, you can substitute canola oil in place of the butter. I have tried this several times and the waffles still work just fine and tastes great!
These waffles are crisp on the outside and nice and spongy on the inside. Top them with butter and syrup and your good. Or go gourmet with your toppings if you have the time.

Weekday Waffles
Real Mom Kitchen
Ingredients
- 1 ½ cups flour
- 1 ½ tsp baking powder
- pinch of salt
- 2 Tbsp sugar
- 1 ½ cups milk
- 2 eggs
- ½ tsp vanilla
- 3 Tbsp butter *see note
Instructions
- In a bowl, whisk together the flour baking powder, salt and sugar.
- In another bowl, whisk together the milk eggs and vanilla.
- Add the flour mixture to the egg mixture and whisk together just until combined. Then stir in the melted butter.
- Cook batter according to your waffle maker instructions. I use 1/2 batter for my regular waffle iron and 1 cup for my Belgian waffle maker. Makes 6 regular waffles or 3 Belgian waffles.
