Watermelon is the fruit of summer. I always look forward to summer just for the watermelon. No matter how you cut it, it’s delicious just like with this watermelon mint and feta salad.

However, as summer winds down, sometimes there can be too much of a good thing. I have been loving watermelon so much, that I start to get tired of it. This is the perfect time to mix things up with that fruit of summer. Enter this tasty salad recipe.

This salad is still almost as easy to serve and slicing up that watermelon. With a few extra ingredients, you can give that watermelon new life to enjoy the remainder of the summer. Give it a try.

Watermelon, Mint, and Feta Salad


  • 4 cups watermelon, cubed
  • 6 mint leaves, minced
  • ⅓ cup crumbled feta
  • juice of one lime


  1. In a large bowl, toss together all of the above ingredients and serve.
