Watermelon is the fruit of summer. I always look forward to summer just for the watermelon. No matter how you cut it, it’s delicious just like with this watermelon mint and feta salad.
However, as summer winds down, sometimes there can be too much of a good thing. I have been enjoying and loving watermelon so much, that I actually start to tire of it. This is the perfect time to mix things up with that fabulous fruit of summer. Enter this simple but tasty salad recipe.
This salad is still almost as easy to serve and slicing up that watermelon. With just a few extra ingredients, you can give that watermelon new life to enjoy the remainder of the summer. Give it a try. Take it to a summer bbq. The guests will be thrilled to get to enjoy watermelon in a new way.
I also have a strawberry watermelon slush that is another delicious way to change up your watermelon. You place it in a blender with some strawberries, lemon juice, sugar, and ice.

- WATERMELON
- MINT LEAVES
- CRUMBLED FETA
- LIME
Watermelon, Mint, and Feta Salad
Ingredients
- 4 cups watermelon, cubed
- 6 mint leaves, minced
- 1/3 cup crumbled feta
- juice of one lime
Instructions
- In a large bowl, toss together all of the above ingredients and serve.
