I must say, I’m not one for making a home cooked breakfast during the week. I’m enough of a morning person to get up when I need to be up, but not enough to get up earlier to make my family a home cooked breakfast like these truck stop pancakes before they head out the door.
However, I do like to sleep in on Saturday or Sunday and then wake my family up with a home cooked breakfast. It is a good way to get my teenagers out of bed on the weekend at like 10 am instead of noon! I can get them up if they know I have food waiting for them.
Truck Stop Pancakes
Pancakes are a good go-to breakfast to make and this recipe produces those diner or truck stop style pancakes. Plus, it makes enough to feed a truck stop! Which is great for me with a 20 year old son and a 17 year old son.
If the recipe is too much for you, I do also have a scaled down version below for you. However, you can make up the extra pancakes and keep them in the fridge or freezer for another day. For me, it works perfect for those weekday mornings that I don’t cook breakfast. My kids can zap ’em in the microwave for a few seconds and have a nice hot breakfast.
I guess you could also keep the batter in the fridge for the next day, but my experience with keeping batter like this in the fridge hasn’t been good. Usually when I pull out the batter the next day, it doesn’t look too appetizing, so I wouldn’t recommend it.
But no worries, I have included a scaled down version of the recipe for those of you who want to make a smaller batch.
Truck Stop Pancakes
Real Mom Kitchen
Ingredients
- 5 eggs
- 1 ½ cups milk
- 6 Tbsp butter melted
- 5 cups buttermilk
- 5 cups flour
- 5 tsp baking powder
- 5 tsp baking soda
- 1 pinch salt optional
- 5 Tbsp sugar
Instructions
- In a large bowl, whisk together the eggs, milk, butter and buttermilk.
- Add in the flour, baking powder, baking soda and sugar. Stir to combine just until the dry ingredients are blended in. At this point for can adjust the thickness of the batter to your liking by adding more flour or buttermilk if need.
- In a non-stick pan over medium heat, pour 1/4 cupfuls of batter onto the pan and cook until bubbles appear on the surface. Turn and cook until browned on the other side. Serves 12.

- 3 cups buttermilk
- 3 flour
- 1 Tbsp baking powder
- 1 Tbsp baking soda
- dash of salt
- 3 Tbsp sugar

- In a large bowl, whisk together the eggs, milk, butter and buttermilk.
- Add in the flour, baking powder, baking soda and sugar. Stir to combine just until the dry ingredients are blended in. At this point for can adjust the thickness of the batter to your liking by adding more flour or buttermilk if need.
