Almond Croissants – Spring Brunch

Croissants are usually a welcome part of any brunch menu, but a sweet almond croissant is even better. Jazz up store bought croissants with a sweet almond filling inside made from almonds, butter, almond paste, and powdered sugar.  

The almond cream filling is spread on top of the croissant to help slice almond adhere to the pastry for added texture and to ramp up the almond flavor even more. This almond croissant recipe will make regular croissants look like something that you would fine in fancy bakeries.

Easy Almond Croissants

Now you can find almond paste in your regular grocery store, but it may be a little tricky to locate. I had to ask my grocer where to find it. My store had it on the baking isle on the highest shelf.

I never would have found it on my own.  However, I know where to look for next time. So, just save yourself sometime and ask your grocer where to find it at your local store. Also, day-old croissants are perfect to use to make this delicous recipe.

  • ALMOND PASTE
  • POWDERED SUGAR
  • SLICED ALMONDS
  • UNSALTED BUTTER
  • VANILLA EXTRACT
  • LARGE CROISSANTS

Start by adding the almond paste, sugar, 2/3 cup of the sliced almonds, butter, and vanilla to a food processor. Process together until smooth.

Add the remaining almonds to a bowl. Spread a layer of the almond/butter mixture on the bottom half of each croissant.

Place the top halves of the croissants on and spread some of the almond/butter mixture on the top of each croissant. Dip the croissants top side down in the slice almonds.

Then add the croissants to a baking sheet. Bake at 375 degree oven for 15-20 minutes until golden brown. For an extra touch, add a dusting of powdered sugar over the croissants before serving. I promise you, these are amazing!

  • 7-8 oz container almond paste
  • ½ cup powdered sugar
  • 2 cups sliced almonds divided
  • 1 cup butter softened
  • 1 tsp vanilla
  • 1 dozen large croissants sliced in half

Instructions
 

  • In a food processor, combine the almond paste, sugar, 2/3 cup of the sliced almonds, butter, and vanilla.
  • Process until smooth.
  • Place remaining almond in a bowl.
  • Spread a later of the almond/butter mixture on the bottom half of each croissant. Place the top on and spread some of the almond/butter mixture on the top of each croissant. Dip the croissants top side down in the slice almonds.
  • Place the croissants on a baking sheet and bake at 375 for 15-20 minutes until golden brown. You can also sprinkle on a dusting of powdered sugar before serving if desired.
