Croissants are usually a welcome part of any brunch menu, but a sweet almond croissant is even better. Jazz up store bought croissants with a sweet almond filling made from almonds, butter, almond paste, and powdered sugar. The filling is also used to spread on top of the croissant to help slice almond adhere to the pastry for added texture and to ramp up the almond flavor even more.
Now almond paste can be found in your regular grocery store, but may be a little tricky to locate. I had to ask my grocer where to find it. My store had it on the baking isle on the very top shelf. I never would have found it on my own. However, I know where to look for next time. So, just save yourself sometime and ask your grocer where to find it at your local store.
Here is what you need to make the
Almond Croissants
- ALMOND PASTE
- POWDERED SUGAR
- SLICED ALMONDS
- BUTTER
- VANILLA
- LARGE CROISSANTS
Almond Croissants
Ingredients
- 7–8 oz container almond paste
- 1/2 cup powdered sugar
- 2 cups sliced almonds, divided
- 1 cup butter, softened
- 1 tsp vanilla
- 1 dozen large croissants, sliced in half
Instructions
- In a food processor, combine the almond paste, sugar, 2/3 cup of the sliced almonds, butter, and vanilla.
- Process until smooth.
- Place remaining almond in a bowl.
- Spread a later of the almond/butter mixture on the bottom half of each croissant. Place the top on and spread some of the almond/butter mixture on the top of each croissant. Dip the croissants top side down in the slice almonds.
- Place the croissants on a baking sheet and bake at 375 for 15-20 minutes until golden brown.
