I’m bringing you an easy and speedy white chicken chili for today’s soup recipe that only takes four main ingredients! Simply combine them, heat until everything is warmed through, and you’ve got a delicious, hearty meal in minutes. It’s an excellent “emergency” meal to whip up when you’re short on time but still want something comforting and flavorful.

I adapted this recipe from one I initially found in a Weight Watchers Facebook group, making it incredibly quick to prepare and healthy. This one was a standout for its simplicity and health-conscious ingredients. You get a low-calorie, protein-packed meal that still feels hearty and satisfying.

Next, you’ll be using white beans. The recipe uses canned beans to make this speedy, but more specifically, white chili beans. These are typically beans that have been cooked and canned in a mildly spiced chili sauce. The sauce often includes ingredients like tomatoes, chili powder, garlic, onion, and sometimes cumin. Third, is frozen corn. It’s a great way to enhance the texture and flavor of the chili. Can I make this chili without the McCormick seasoning mix?
Yes, if you don’t have the seasoning mix, you can make your own using garlic powder, cumin, onion powder, oregano, and a little chili powder for heat. I’ve included a recipe to make your own in the notes of the recipe. Adjust the seasonings to taste to ensure the chili has a well-rounded flavor.

Can I make this chili in the slow cooker?
Absolutely! You can add all the ingredients to a slow cooker and cook on low for 4-6 hours or on high for 2-3 hours. Just make sure everything is heated through and the flavors have combined.

Can I freeze leftovers?
Yes, this chili freezes well. Just let it cool completely before transferring it to an airtight container and storing it in the freezer. It can be frozen for up to 3 months. When you’re ready to eat, thaw in the fridge and reheat on the stove.

How can I make this chili spicier?
To add more heat, you can add diced jalapeños, a pinch of cayenne pepper, or some hot sauce to the chili. Adjust the spice level according to your preference.

Can I add in any extra ingredients?
Yes, canned green chiles or diced roasted red peppers from a jar are other great additions. Feel free to add any ingredients that you may have on hand that would work in chili. Ingredients
  

  • 2 cups chicken cooked and shredded or one 12.5 oz can of chicken
  • 30.1 oz canned white chili beans two 15.5 oz cans
  • 1 cup frozen corn
  • 1.25 oz pkg white chicken chili seasoning mix
  • 2 cans water or chicken broth

Instructions
 

  • In a large sauce pan, combine all of the chili ingredients in addition to 2 cans of water. Heat everything over medium heat until heated through.

Notes

If you don’t have a pkg of chili seasoning, you can use this as a substitute:
1/4 tsp cayenne, 1/2 tsp onion powder, 1 tsp garlic powder, 1 tsp cumin,
 1/2 tsp oregano, 1/2 tsp dried cilantro, 1/2 tsp sugar, and 1/2 tsp cornstarch
