Spring and lemon go hand in hand. I have done a lemon week the past few years here at RMK because I love lemon so much. Usually I have a stack of recipes I am waiting to try including this simple lemon fruit dip. So It is lemon week again here at RMK. I also thought it would work well to share these recipe right before Mother’s Day because they would work well to include in your menu.
First up is a simple lemon fruit dip. Lemon works well with fresh fruit. It helps and to the flavor and brings out the freshness of the fruit. This dip also works well as a filling for crepes. It is what I used the the vanilla crepe recipe I shared last week!
- 1 cup cold milk
- 1 pkg (3.4 oz) instant lemon pudding mix
- 1 cup (8 oz) sour cream
- Assorted fresh fruit such as strawberries, bananas, pineapple, etc.
- In a small bowl, beat milk and pudding mix together for 2 minutes (mixture will be thick).
- Add in the sour cream and whisk until combined. Chill until serving. Serve with fruit. Yield: 1-2/3 cups.
