First off if you printed the focaccia sandwich recipe from yesterday, reprint it! I have two readers try it yesterday and I realized there was a typo in the ingredients. It should have been 1 cup of warm water not 2. I had taken my easy peasant bread recipe and adapted it to make the focaccia, in doing so I needed to half the ingredients. I missed changing the amount of water. I am so sorry for this mistake, but I am human. I just don’t want anyone else having issues with the recipe.
Now on to today’s recipe. We recently had some friends over for a bbq. Part of my menu included some fresh fruit. I wanted to whip together a dip but life had been crazy and I had not planned anything specific. So I looked around my house to see what I could find and I ended up creating this yummy fruit dip with a tropical flair. It was so yummy I had to share.
Pina Colada Fruit Dip
- 1 (3.4 oz) pkg instant coconut cream pudding mix
- 3/4 cup Cool Whip (I used the extra creamy kind)
- 1 cup milk (I used skim)
- 1 cup crushed pineapple, undrained
In a bowl, blend together the pudding mix, cool whip, and milk with a hand mixer for 2 minutes. Fold in the pineapple. Refrigerate for at least 30 minutes and serve with fresh fruit.

I make similar dips all the time and it works best if you mix up the pudding, milk and pineapple first and then fold in the cool whip – otherwise you over mix the coolwhip and it gets runny.
Thanks for the share! I found this via Pinterest and made it for my mommy bunco tonight. I was wondering – is it supposed to be kind of soupy/runny? It’s been in the fridge for about 4 hours and didn’t set up the way I thought it would…
It tastes SO good, though!!!
I also found this in Pinterest and couldn’t get it to thicken up. I thought maybe I did something wrong. Another response says to fold in the cool whip… I think I’ll try that next time (and there will be a next time- it was Delicious!!)

Great idea! Going to my son’s house for Fathers’ Day, they will love this!!! Thank You!!
This looks so so good! I love fruit dips so I will definitely be trying this one!
I think when I make this I will substitute real whipping cream. I don’t like cool whip. Too greasy. Real whipping cream rocks!!
I love Pina Colada flavored treats! Can’t wait to try this! This is perfect for summer!
nummers. We are having a bbq on Sunday and I was assigned potato salad but I think I will take this also, with the fresh fruit. The kids will go nuts.
This looks really good! I can’t wait to try it.
