Just in time for the Fourth of July, I have a delicious new pasta salad to share with you. This Italian Grinder Pasta Salad takes all the flavors of a classic Italian grinder sandwich and turns them into a perfect summer pasta salad, great for cookouts, potlucks, and family gatherings.
My husband is not usually much of a salad person unless there is some meat involved, so this one was definitely a win for him. Just like the sandwich version, it includes three different meats: pepperoni, salami, and turkey or ham. I like to use turkey in mine. - 12 oz rotini pasta I use protein pasta
- 1½ cups romaine lettuce chopped
- 1 cup grape tomatoes halved (I used cherry tomatoes and quartered them)
- 1 cup salami chopped
- 1 cup pepperoni chopped
- 1 cup deli turkey or ham, chopped
- 1 cup provolone cheese chopped
- ½ cup red onion sliced (I left this out)
- ½ cup pepperoncini peppers sliced (I left this out and added it to my serving)
Dressing
- 1 cup mayonnaise
- 1 Tbsp red wine vinegar
- 3 Tbsp pepperoncini liquid
- 1 tsp salt
- ¼ tsp freshly cracked black pepper
- 1 Tbsp Italian seasoning
- 2 tsp garlic minced
- ½ cup parmesan cheese grated
Instructions
For the salad:
- Cook the pasta according to package directions to al dente. Drain the pasta in a strainer, then rinse the pasta under cold water. Drain well and set aside.
- In a large bowl, combine the cooked pasta along with all of the other salad ingredients.
For the dressing:
- In a medium-sized bowl, whisk together all of the ingredients until combined.
- Pour the dressing over the pasta salad and gently toss to coat the ingredients well. Makes 4 main dish servings or 8 side servings. Calories based on the main dish serving.
