This Italian grinder pasta salad is a hearty, flavorful summer dish inspired by the classic sandwich. With pasta, deli meats, provolone, crisp vegetables, and a creamy tangy Italian dressing, it is perfect for cookouts, potlucks, and easy family meals. 1cupgrape tomatoeshalved (I used cherry tomatoes and quartered them)
1cupsalamichopped
1cuppepperonichopped
1cupdeli turkey or ham, chopped
1cupprovolone cheesechopped
½cupred onionsliced (I left this out)
½cuppepperoncini pepperssliced (I left this out and added it to my serving)
Dressing
1cupmayonnaise
1Tbspred wine vinegar
3Tbsppepperoncini liquid
1tspsalt
¼tspfreshly cracked black pepper
1TbspItalian seasoning
2tspgarlicminced
½cupparmesan cheesegrated
Instructions
For the salad:
Cook the pasta according to package directions to al dente. Drain the pasta in a strainer, then rinse the pasta under cold water. Drain well and set aside.
In a large bowl, combine the cooked pasta along with all of the other salad ingredients.
For the dressing:
In a medium-sized bowl, whisk together all of the ingredients until combined.
Pour the dressing over the pasta salad and gently toss to coat the ingredients well. Makes 4 main dish servings or 8 side servings. Calories based on the main dish serving.
