As promised, I am getting more Instant Pot (pressure cooker) recipes for you guys. This one is for a fabulous Instant Pot tomato basil soup. It’s just as good as ones that I have tried in a restaurant.
This soup is full of flavor! It’s also nice and creamy. The creaminess is partially due to the use of a roux. The flavor and creaminess can also be attributed to a cup of parmesan cheese.
If you haven’t jumped o the instant pot band wagon yet, no worries. This can also be prepared in the slow cooker, but will take a minimum of 3 hours to cook. The instructions for the slow cooker have also been included in the recipe.
Recipe adapted from 365 Days of Slow Cooking.
