Once the oil is hot, place the roast in the Instant Pot and sear it on both sides until nicely browned. This step adds extra flavor to the finished dish. When the roast is browned, turn off the sauté setting.

Pour the broth into the pot around the roast. Place the lid on the Instant Pot and make sure the valve is set to sealing. Cook on high pressure for 60 minutes, then let the pressure release naturally for 20 minutes. After that, carefully release any remaining pressure and remove the lid.

Transfer the pork roast to a serving platter and let it rest while you make the gravy. Turn the Instant Pot back to the sauté function.   • Remove the roast and place it on a platter. Turn the Instant Pot on to saute. Combine the cornstarch and water together. Whisk the mixture into the pot and thicken for about 2 minutes to make a gravy.
  • Slice pork or shred and serve with gravy. Serves 6.
