Healthy Slow Cooker Chicken and Gravy

Today, I adapted my original slow cooker chicken and gravy to a healthy slow cooker chicken and gravy. Then, I served this recipe over the healthy Instant Pot mashed potatoes recipe that I already shared with you. A super simple recipe to mix up in the Crock Pot.

I cook it on low for 8-10 hours. However, it also works to cook on high for 3 to 4 hours to speed up the cooking process.

For me, this slow cooker chicken and gravy recipe was only 2 WW personal points. Then, if you serve it over my healthy mashed potatoes, it makes this dish 7 points total in WW personal points. This was just as well received by my family as my regular recipe.

I made this recipe healthier by using 98% fat free cream of chicken soup instead of regular cream of chicken soup. I substituted the 98% fat free cream of chicken soup to reduce the fat content in the dish. This change in ingredients was made to make the dish more nutritious.

Next, I added in some garlic powder and onion powder to up the flavor.

Mix gravy packets, cream of chicken soup, water, onion powder, garlic powder, and pepper in the slow cooker until smooth.

Then, add the chicken breasts being sure to get them covered in the gravy.

Cook this all on low for 8 to 10 hours or on high for 3-4 hours. Once cooked, shred the chicken or break it up into chunks.

You can serve this over cooked noodles, mashed potatoes, or rice.

If I want to serve this over rice, what kind is the healthiest?
The healthiest rice options generally include whole grains, such as brown rice, black rice, and wild rice. These types of rice have more fiber, vitamins, and minerals compared to white rice.

How do I safely handle raw chicken?
When handling chicken, always wash your hands before and after. Use a separate cutting board to avoid cross-contamination.

Keep raw chicken refrigerated and use within 1-2 days.

Cook chicken to an internal temperature of 165°F (74°C) to ensure it’s safe to eat. Store leftovers properly in the refrigerator and consume within 3-4 days.

Can I make the gravy thinner?
Yes! For a thinner gravy, simply add about ½ to 1 cup of water or chicken broth to the soup mixture. Adding some water/chicken broth is a great way to stretch the gravy.

What are some sides that go well with this?
We like to have Skillet Dill Green Beans, Roasted Asparagus, or Oven Roasted Broccoli.

  • 2 0.87 oz packets dry chicken gravy mix
  • 1 10 3/4 oz can 98% fat free cream of chicken soup
  • 1 ½ cups of water
