I hope you all have a fabulous New Year’s Eve and New Years Day. My kids have 4 days of vacation left and then they will head back to school. I,  however, have to get back to work today.

I wanted to briefly share with you one of my New Year’s resolutions. Last year my one word goal for the year was simplify. This year my one word goal for the year is brave. This is based upon the song Brave by Sara Bareilles. For me, Brave for the year will mean – not giving into fear, being completely honest with myself, and speaking up for myself. I would love to hear what your goals are.

To begin the New Year, I am sharing a simple and easy recipe. This is for a slow cooker chicken and gravy. It can be served over noodles, mashed potatoes, or rice. It can also be used to make hawaiian haystacks. My family loves mashed potatoes so that is how I served it.

I made this last week and my entire family loved it so, so much! We had more gravy than potatoes, so I made more potatoes the next night and we very happily enjoyed it two nights in a row. Thanks for the super easy, super tasty recipe! 🙂

I make this and I cut the chicken in cubes…I only make half the recipe…I start it out on high for and hour, then on low for 2 or 4 more hours…Turns out great…

I made this the other night. I had it cook for 8 hours– I was so worried the chicken would be dry! But it was wonderful and tender!! I will make this often! Thank you so much!

Chicken will not dry out. It will be fall apart moist. I cook the ranch buffalo chicken in the crock pot all day, it’s soooo tender and moist and shreds with just a fork.

Thank you for sharing my recipe! Doug- this chicken is moist, since it simmers in the gravy all day! Its my favorite meal in the slow cooker! 🙂

Is the chicken frozen when you put it in the crockpot?

8 to 10 hours in a crockpot will leave chicken breast so dried out it will be inedible!!
