Start by placing a large stock pot or Dutch oven on the stove top over medium heat. Add the ground beef and chopped onion, cooking until the beef is fully browned and the onion is soft and tender. Break the beef apart as it cooks so it’s nice and crumbly. Once cooked through, carefully drain excess grease.

Stir in the minced garlic and cook for about one minute, just until fragrant. This quick step adds another layer of flavor to the soup.

Next, add in all of the remaining ingredients and give everything a good stir to combine. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Let the soup cook for 10-15 minutes, or until the potatoes are fork-tender and the flavors have had time to come together. Serve warm and enjoy this hearty, comforting bowl of tasty cowboy soup. Cornbread is an excellent accompaniment to this tasty soup.

Can I make cowboy soup in the slow cooker?
Yes! Brown the ground beef and onion first, then add everything to the crock pot. Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the potatoes are tender.

Can I freeze cowboy soup?
Absolutely. Let the soup cool completely, then store it in freezer-safe containers or freezer bags for up to 3 months. Thaw overnight in the fridge before reheating.

Can I use ground turkey instead of beef?
Yes, ground turkey works well as a lighter option. You may want to add a little extra seasoning since turkey is leaner and milder in flavor.

Can I make it spicier?
Definitely. Add diced green chiles, jalapenos, a pinch of cayenne, hot sauce, or use fire-roasted tomatoes for extra heat and depth.

Do I have to use frozen veggies?
No. Fresh vegetables work just fine. Just chop them into small pieces so they cook evenly and become tender.

Can I make this ahead of time?
Yes! The flavor actually gets even better the next day, making it a great make-ahead meal.
