Mangia! It’s National Pasta Day today! Of course, I have a collection of tasty ways to celebrate including a simple Italian white bean and pasta soup.

This soup recipe that is the main focus for today is an amazingly simple. It is definitely one that I will be using a lot during this soup season.

When I made this, I was a little worried that my family might not like it because it has spinach and also has no meat. To my surprise, they LOVED it! I loved how easy it was to make and that it cooks in the crock pot!

This recipe uses lasagna noodles as the pasta. It’s perfect for those noodles that were slightly broken in the box from when you last made lasagna.

Ingredients
  

  • 1 24 oz jar of marinara sauce
  • 4 cups or 32 oz of chicken broth
  • 2 15 oz cans cannellini beans, drained and rinsed
  • 3 cups or 2 1/2 oz of fresh spinach
  • 6 uncooked lasagna noodles broken into pieces

Instructions
 

  • Add the sauce, broth, beans, and spinach to your slow cooker and cook on low for 6-8 hours.
  • Mix in the lasagna noodles and cook for another 30 minutes until the pasta is tender. Serves 4-6.
