Easy Chef Salad with Homemade Thousand Island

Chef salad is one of those salads I can usually get my husband to eat, especially when I serve it with a creamy homemade Thousand Island dressing. With hard-boiled eggs, plenty of meat, cheese, and crisp vegetables, it is hearty enough to feel like a full meal instead of just a side salad.

This recipe works especially well for a quick dinner because most of the ingredients only need to be chopped and assembled. It is also a great option for meal prep since you can divide everything into individual containers for lunches or easy dinners on the go. The most time-consuming parts are cooking the hard-boiled eggs and mixing together the dressing, but even those steps are simple.

For the eggs, the Instant Pot is a great option if you like making several at once. I have a small egg cooker, and I usually reach for it because it is quick, convenient, and easier than pulling out my large Instant Pot. Once the eggs are cooked, the rest of the salad comes together in no time.

The Thousand Island dressing tastes best when it has a little time to chill before serving. Making it in the morning—or even the night before—gives the flavors time to blend together and makes the dressing taste even better. Just keep it covered in the refrigerator until you are ready to serve the salad.

  • MAYONNAISE – Mayonnaise creates the creamy base for the homemade Thousand Island dressing. It gives the dressing its rich, smooth texture and helps balance the sweetness and tang from the ketchup, relish, and lemon juice.
  • KETCHUP – Ketchup adds sweetness, tang, and that familiar tomato flavor to the dressing.
  • SWEET PICKLE RELISH – Sweet pickle relish adds little bits of pickle, sweetness, and tang to the dressing. It also gives Thousand Island its classic texture.
  • LEMON JUICE – Lemon juice adds brightness and acidity to balance the ketchup and relish’s sweetness.
  • ONION POWDER – Onion powder adds savory flavor without the sharp bite or texture of fresh onion.
  • SWEET PAPRIKA – Sweet paprika adds mild flavor and deepens the dressing’s color without adding heat.
  • SUGAR -A little sugar rounds out the tangy ingredients and gives the dressing its signature sweet-and-savory flavor.
  • SALT – Salt enhances all the flavors in the dressing and salad.
  • ROMAINE LETTUCE – Romaine gives the salad a crisp, sturdy base that holds up well under all the hearty toppings.
  • HARD-BOILED EGGS – Hard-boiled eggs add protein and make the salad more filling. Their creamy yolks also pair especially well with Thousand Island dressing.
  • HAM – Ham adds smoky, savory flavor and makes the salad feel more substantial.
  • TURKEY -Turkey adds lean protein and balances the richer ham, cheese, and dressing.
  • CHEDDAR CHEESE – Cheddar adds bold, creamy flavor and makes the salad even more satisfying.
  • CHERRY OR GRAPE TOMATOES – These small tomatoes add sweetness, juiciness, and fresh color to the salad.
  • CUCUMBER – Cucumber adds cool, crisp texture and freshness.
  • CROUTONS – Croutons add crunch and make every bite more interesting. Add them just before serving to keep them crisp.

Start by making the Thousand Island dressing. Add the mayonnaise, ketchup, sweet pickle relish, lemon juice, onion powder, paprika, sugar, and salt to a small bowl. Stir until the dressing is smooth and all of the ingredients are well combined. For the best flavor, cover and refrigerate the dressing for at least a little while before serving.

To assemble the salads, divide the chopped romaine evenly among four plates for dinner or four meal-prep containers. Top each portion with hard-boiled eggs, ham, turkey, cheddar cheese, tomatoes, and cucumber.

Serve the salads with the homemade Thousand Island dressing and add the croutons just before eating so they stay crisp. For meal prep, store the dressing and croutons separately until you are ready to serve.

Can I make the Thousand Island dressing ahead of time?
Yes. In fact, it tastes even better after it has chilled. Make it a few hours ahead or the night before and keep it covered in the refrigerator.

Can I use a different lettuce?
Yes. Romaine is a great choice because it stays crisp and holds up well under the toppings, but iceberg, green leaf, or a blend of lettuces can also work.

Can I use different meats?
Absolutely. Ham and turkey are classic choices, but you can add or substitute cooked chicken, roast beef, or even bacon.

What kind of cheese works best?
Cheddar is classic and adds plenty of flavor. Swiss, Colby Jack, or Monterey Jack would also be good options.

Can I make this salad for meal prep?
Yes. Divide the lettuce and toppings into individual containers, but keep the dressing and croutons separate until serving to keep the salad fresh and crisp.

How long will the homemade dressing keep?
Stored in an airtight container in the refrigerator, it should keep well for several days. Stir it before serving if it has separated slightly.

Can I use bottled Thousand Island dressing instead?
Yes, but the homemade version is quick to make and gives the salad a fresher flavor.

Can I add more vegetables?
Definitely. Bell peppers, shredded carrots, red onion, avocado, or radishes make delicious additions.

How do I keep the salad from getting soggy?
Make sure the lettuce is completely dry before assembling, and add the dressing and croutons only just before eating.

Can I make the hard-boiled eggs ahead of time?
Yes. Cook and refrigerate the eggs ahead of time to make assembly even quicker.

  • Dry the lettuce really well. Extra moisture can make the salad soggy and water down the dressing. A salad spinner works especially well.
  • Prep the eggs in advance. Hard-boil the eggs earlier in the week so assembling the salad takes just a few minutes.
  • Chop everything into bite-size pieces. Keeping the meat, cheese, vegetables, and eggs similar in size makes the salad easier to eat and gives you a little of everything in each bite.
  • Keep dressing and croutons separate for meal prep. Add both just before serving to keep the lettuce fresh and the croutons crunchy.
  • Make the dressing ahead. The homemade Thousand Island dressing tastes even better after the flavors have had time to blend together in the refrigerator.
