Healthier Cowboy Pasta Salad

I have another delicious pasta salad recipe to share, and this one is a healthier spin on the cowboy pasta salad I have shared before. It is a salad my husband really loves, so I wanted to see if I could lighten it up a bit while still keeping all of the flavor that makes it so good. I also wanted to use that newer protein pasta I tried in another recipe this week, and it worked really well here.

This salad is already packed with protein thanks to ingredients like ground beef, bacon, and black beans. Adding the protein pasta makes it even heartier, turning it into a pasta salad that feels extra filling and satisfying. It is one of those salads that works well as a side dish, but it is hearty enough to easily be a meal on its own.

The creamy dressing is also made a little lighter by using light mayonnaise and reduced-fat sour cream. If you want to make it even healthier, you could swap in plain Greek yogurt for part or all of the sour cream. I still used regular barbecue sauce because I have not found a sugar-free one that I really love yet. But if you already have a healthier barbecue sauce you enjoy, that would be a great way to lighten it up even more.

The salad also includes cheese. I used shredded cheese when I made it, and it worked fine, but I felt like it kind of blended into the salad and got a little lost. After trying it, I think I would actually prefer using cheese cut into small cubes instead. That way, you would get more noticeable bites of cheese throughout the salad, which I think would make it even better.

This lighter version comes in at about half the calories per serving compared to the original recipe, which makes it a great option when you want all those cowboy pasta salad flavors in a healthier way.

Start by cooking the bacon using your preferred method. I like to bake mine in the oven because it is easy and cooks evenly. Once the bacon is crisp, let it cool a bit and then cut it into small pieces.

Next, cook the pasta according to the package directions. Once it is done, drain it and rinse it under cold water to cool it down and stop the cooking process.

While the pasta cooks, brown the ground beef in a large skillet over medium heat until it is fully cooked. Drain off any excess grease, then season the beef with the chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir well so the meat is evenly coated in the seasoning.

In a large bowl, combine the cooked pasta and seasoned beef with the corn, black beans, tomatoes, cheese, green onion, and cilantro. Gently toss everything together until the ingredients are evenly mixed.

To make the dressing, whisk all of the dressing ingredients together in a separate bowl until smooth and well combined. At this point, if you want to make the salad ahead of time, you can refrigerate the salad, dressing, and bacon separately until you are ready to serve.

When it is time to serve, pour the dressing over the salad, add the bacon, and toss everything together until well coated. This recipe serves 5 as a main dish or about 10 as a side dish.

Can I use regular pasta instead of protein pasta?
Yes. Regular pasta works just fine in this recipe, so use whichever type you prefer or have on hand.

Does the protein pasta taste different?
In my experience, it was very similar to regular pasta. My family did not even notice a difference when I used it in this salad.

Can I make this pasta salad ahead of time?
Yes. This salad works well made ahead. For the best texture, keep the salad, dressing, and bacon separate until you are ready to serve.

Can I use Greek yogurt in the dressing?
Yes. Plain Greek yogurt is a great option if you want to make the dressing even lighter and add a little extra protein.

What if my family does not like cilantro?
You can leave it out if needed. The salad will still have plenty of flavor without it.

Ingredients
  

Salad:

  • 8 slices bacon
  • 1 lb. lean ground beef
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • 12 oz protein rotini pasta
  • 1 cup frozen sweet corn thawed
  • 15 oz can black beans drained and rinsed
  • 1 cup grape tomatoes halved
  • cup cheddar cheese shredded or finely diced
  • ¼ cup green onion finely chopped
  • 2 Tbsp fresh cilantro finely chopped

Dressing:

  • cup light mayo
  • ½ cup light sour cream or Greek yogurt
  • ¼ cup barbecue sauce
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp spicy brown mustard

Instructions
