This Classic Chef Salad with Homemade Thousand Island Dressing is loaded with crisp romaine, ham, turkey, hard-boiled eggs, cheddar cheese, tomatoes, cucumber, and crunchy croutons. It is hearty enough for dinner but also works well for meal prep and easy lunches on the go. The creamy homemade Thousand Island dressing brings everything together with the perfect balance of sweet, tangy, and savory flavor.
1cupcherry tomatoes or grape tomatoes (diced in half or leave whole for meal prep)
1small cucumber diced
croutons
Instructions
In a small bowl, add all of the dressing ingredients. Stir together until smooth and well combined. Refrigerate until serving. I like to make this ahead and let it sit for a while so the flavors meld. I suggest at least 30 minutes.
Assemble salads by dividing salad ingredients between 4 plates for dinner or 4 containers for meal prep. Serve with dressing and croutons.
