Ingredients
  

  • 13 graham cracker sheets
  • 2 ½ cups miniature marshmallows
  • ¾ cup butter
  • ¾ cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 cup sliced almonds
  • 1 cup sweetened shredded coconut

Instructions
 

  • Preheat oven to 350 degrees. Line a 15x10x1-in. baking pan with foil, letting foil extend over sides by 1 in. Spray foil with lightly coat foil with cooking spray.
  • Arrange graham crackers in prepared pan. You should need to cut 1 graham cracker sheet in half lengthwise to be able to finish lining the pan. Sprinkle marshmallows over the graham crackers.
  • In a small saucepan, melt butter with brown sugar and cinnamon; cook and stir over medium heat. Bring to a simmer and then remove from heat. Stir in vanilla. Spoon mixture over marshmallows.
  • Sprinkle coconut over the caramel layer followed by the almonds. Bake at 350 degrees until browned, 14-16 minutes. Cool completely in pan on a wire rack.
  • Using foil, lift out of pan. Cut into triangles and discard foil. Makes 3 dozen.
