Dark Chocolate Cherry Brownie Parfaits and a la Mode

I have two very quick and easy recipes for you today that would be perfect last minute desserts for your 4th of July celebration, but they would also be wonderful at anytime of the year. The dark chocolate cherry brownie parfaits and a la mode utilize a new cherry product. Nestle has some new Cherry Raisinets and they sent me some to sample.  They are delish.  I mean how can you loose with something that is covered in chocolate?  Plus cherries and chocolate go so well with each other.

Cherry Raisinets contain whole dried cherries and provide a win-win option with ½ a serving of real fruit in every ¼ cup.  They are a yummy snack, but are also a fabulous addition to recipes too.  I have two recipes for you today.  Both start with the same brownie base.  You take you favorite brownie mix and add some cherry raisinets for a fun twist.  Then you can use the brownies as layers to dark chocolate cherry brownie parfaits or serve them up a la mode with a scoop of  black cherry and vanilla frozen yogurt.  Recipes and photos for today have been provided by www.meals.com with permission.

Dark Chocolate Cherry Brownie Parfaits

Ingredients
  

  • 24 paper cupcake liners
  • nonstick cooking spray
  • 1 box 18.3 to 20 ounces chocolate brownie mix
  • 2 packages 4 ounces each Cherry NESTLÉ RAISINETS Dark Chocolate-Covered Dried Cherries, divided
  • 1 container 8 ounces frozen fat free whipped topping, thawed
  • 1 box 2.1 ounces instant sugar free, fat free chocolate fudge pudding and pie filling mix, prepared according to package directions

Instructions
 

  • Preheat oven to 350° F. Place liners in muffin cups.
  • Prepare brownie mix batter according to box directions; stir in 1 package Dark Chocolate Cherry Raisinets after all ingredients are combined. Fill prepared muffin cups 1/2 full with batter.
  • Bake for 15 to 18 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack.
  • Cut brownies in half. Place one brownie half in each of 24 parfait cups. Spoon 2 tablespoons whipped topping over each brownie half. Spoon 2 tablespoons pudding over whipped topping; top with remaining brownie half. Top with 1 tablespoon whipped topping. Sprinkle parfaits with remaining package of Dark Chocolate Cherry Raisinets.

Ingredients
  

  • 24 paper cupcake liners

  • 1 package 4 ounces Cherry NESTLÉ RAISINETS Dark Chocolate-Covered Dried Cherries
  • 6 cups Black Cherry Vanilla Swirl DREYER'S or EDY'S Yogurt Blends Cultured Frozen Dairy Dessert

Instructions
 

  • Preheat oven to 350° F. Place liners in muffin cups.
  • Prepare brownie mix batter according to box directions; stir in Dark Chocolate Cherry Raisinets after all ingredients are combined. Fill prepared muffin cups 1/2 full with batter.
  • Bake for 15 to 18 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack.
  • Top each brownie with 1 scoop (about ¼ cup) Yogurt Blends. Makes 24.
